Fourth of July is fast approaching, and what’s the glorious fourth without some delicious barbecue? The problem is, it’s hot outside. Temperatures are in the high nineties here, and several days, we’ve hit a hundred. What do you do when your family begs for BBQ, but you really don’t want to fire up your grill? Gas, charcoal. . . it’s too hot!
Answer: Barbecue those pork chops in your crockpot.
I said “pork chops” up there because that’s what we had for dinner tonight, but really, you can throw any kind of meat into your slow cooker, add some Craig’s BBQ Sauce and a little chopped onion, and the neighbors will call and ask if they can join your family for supper. Pork, chicken, lamb, beef. . . whatever you’ve got in the fridge or freezer – just pop it into your crockpot and go.
If you’ve taken it out of the freezer, you don’t even have to thaw it before you put it in the slow cooker. Just make sure you let it cook for at least six hours on low and four hours on high.
Crockpot barbecue is so easy and effortless. Just place the chops or roast or whatever cut of meat you’ve got into your crockpot, pour a cup of Craig’s BBQSauce over it, add a handful of chopped onion, replace the lid, set the crockpot on high or low, depending on how long it’s going to cook, and go about your business.
These boiling hot summer days are the perfect time to use your crockpot. It doesn’t heat up your house, as your oven would, and you don’t have to stand out in the back yard in the broiling sun, turning meat on your grill while your family waits in the air-conditioned house.
Memorial Day Weekend is fast approaching, and many people are planning their family reunion and picnic menus. And what is a family reunion or a picnic without a big pan of delicious spicy baked beans?
Texas Pepper Jelly’s recipe for baked beans is so superior to all other recipes for baked beans that after you try ours, you’ll never go back!
The best baked beans are made from cans of pork and beans – this is not a cop-out; it’s a fact. Oh, you can soak navy beans all night if you want to, but the result isn’t as tasty. My family will back that up. 🙂
3 cans pork & beans (off-brands work as well as name brands here)
1/2 cup finely chopped onion
1/2 cup brown sugar
1 cup ketchup
1/4 cup Craig’s BBQ Sauce
4 strips bacon
What to do:
Dump everything but the bacon in a large baking pan – I always use my beautiful Pioneer Woman dishes – and criss-cross the bacon on top. Bake in a 350 oven for 45 minutes. Remove from oven and stir the bacon into the beans so the flavoring is spread throughout. Let the beans “sit” for about fifteen minutes before serving.
Don’t expect any leftovers, but if by some chance a few people don’t show up and you have a little bit of beans leftover, refrigerate.
Item: The beans are delicious ice cold, but if you’re not as adventurous as I am, just microwave for a minute or two.

People who grill have preferences. This is a bit of an understatement. Each person who loves to grill firmly believes that their own way is the only way.

A good griller can find success on any kind of grill, of course, but let’s face it – we all have a grill of choice. Randy Clark recently posted a picture of his picnic grill, and don’t those steaks look delicious!

Your hungry football couch quarterbacks are going to want some substantial food, and Texas Pepper Jelly’s thick, spicy meatloaf sandwiches are perfect!
Everybody loves a meat loaf sandwich; we usually use leftover meatloaf, but why wait until the meatloaf is left over to make an awesome sandwich out of it? My husband loves meatloaf sandwiches when he’s watching football, so I always make a big fresh meat loaf for him, our son, and their friends on Superbowl Sunday.
1 pound ground sirloin
1/2 pound ground sausage
1 large onion, diced
1/2 green pepper, diced
1/2 red pepper, diced
3/4 cup ketchup
1/4 cup Craig’s BBQ Sauce
1 sleeve soda crackers, finely crushed
What To Do:
Put all of the above ingredients in a large bowl and mix thoroughly. Use your hands. Make sure the ingredients are mixed really well.
Put the mixture into a large baking dish and put more Craig’s BBQ Sauce on top. Bake for 45 minutes at 350 degrees. Remove from oven and let “set” for about an hour.
My husband likes his meatloaf sandwiches cold, so I put the baking dish in the refrigerator as soon as it’s cool enough to place on the glass shelf. Usually, I make the meat loaf the night before the big game.
My son likes his meat loaf sandwiches hot, but that’s what the microwave oven is for, right?
When it’s sandwich time, I slice the meat loaf into thick slices, place them on a platter, and put the platter on the coffee table along with all the condiments in the fridge. Lettuce, sliced pickles, and tomatoes go on another platter. Put some plastic knives in a cup, and step back. Put some hamburger buns and some regular bread slices – white and wheat and rye – on another platter. These sandwiches, a bowl of potato salad, a pan of baked beans, and some drinks, will hold your couch quarterbacks for a couple of hours. My crew usually wants some potato chips and popcorn later on.
There’s just something about football that makes even the at-home fans really hungry. Texas Pepper Jelly products will fill those needs better than anything else!
December is a busy month for most of us, for many different reasons and a myriad of holidays; this makes December the perfect month for making the most of your crockpot. There is so much we need to do, and there are so many places we need to go! Whatever helps simplify our lives is well worth doing.
Busy as we are, we still want our families to have nutritious, tasty meals. Fortunately, this isn’t difficult at all!
No, really. It’s easy.
Just get out your trusty slow cooker, slice an onion and line the bottom of the cooker with the slices, fill it with chicken – the chicken can even be frozen! – pour some Craig’s BBQ Sauce over it, replace the lid, set the dial to “low,” and go on with your busy life.
Eight hours later, when you get back home from work, or from shopping, or from visiting, your house will smell wonderful and your main course will be ready to serve. If you haven’t been anywhere at all, and just needed something simple and good for dinner, you’ll have spent the day with the wonderful aroma.
Either way, you and your family will all be more than ready to sit down to a wonderful dinner.
