Spicy Food Warms the Heart.

Spicy Valentine Candy, pepper jelly, rib candy Texas Peppr Jelly Valentine’s Day is fast approaching, and there’s nothing like something spicy to warm our hearts!

One of my husband’s favorite foods is barbecued pork loin, so last night I put a big frozen-solid pork loin in my crockpot, poured about two cups Texas Pepper Jelly, dicing an onionof Craig’s BBQ Sauce over it, added a cup of diced onions, closed the lid, turned it on “low,” and went to bed.

Everybody in the house had wonderful dreams all night long – even the cats were mesmerized by the delicious aromas wafting throughout every room.

Today, before I left for work, I lifted the crock out of the slow cooker and put it in the refrigerator. You might think nothing more happened to that pork loin while it was sitting in the cold, but you’d be wrong. The fully-cooked loin sat there marinating and soaking in the absolute deliciousness of Craig’s BBQ Sauce and those onions, and when we got home tonight, I put the crock back in the pot, turned it to “high,” got some sweet corn out of the freezer, made a big casserole dish of baked beans, tossed a big salad, and got out some refrigerated yeast rolls.

I usually make our dinner rolls from scratch, but it had been a long day. Mea culpa.

How was the barbecued pork tenderloin, you ask?

It was so tender I had to lift it from the crockpot with two large Texas Pepper Jelly, valentine's dinner, spicy foodslotted spoons instead of tongs. It was so delicious that every time someone walked past the platter, he/she had to grab a taste. By the time I put everything on the table, it looked like this.

My kids were fighting over the outside of the loin; when you cook it in a slow cooker, it develops a kind of outer “shell,” which is so tasty, well, your kids will fight over it, too. You’ll have to cut some of it off and hide it for yourself. Midnight snack. So good.

And I didn’t have to call anybody to the table, either. They were all already there, waiting.

That was our family Valentine dinner. We usually do this early, because my husband and I like to have our official Valentine Dinner with just the two of us.

He did mention that another loin for next week would be nice.

It’s just simply delicious and that’s all there is to it.

Big Football Game of 2014: Chips & Dips & Perfection

football

SuperBowl spicy dip, crackers, football food I say this a lot here (and elsewhere!) that so often it’s the simplest recipes that turn out to be the favorites. Texas Pepper Jelly is one of the two ingredients in the best party dip EVER.

Ingredients:

Several jars of your favorite Texas Pepper Jellies, assorted flavors
Several packages of cream cheese (or Neufchatel, if you’re dieting)

What to do:

Set out several small plates. Or a tray. Put a slab of cream cheese on each one. Or several on the tray.

Put a half cup of pepper jelly on each cream cheese slab.

Put them all on the coffee table, in front of the sofa where your crew will be sitting while they watch the football game. Put a few big bowls of assorted chips and carrot sticks on the table.

That’ll keep ’em busy throughout the entire game. With the occasional refill, of course.

Greatest dip ever. And so very, very simple.

One of our most popular recipes is our Black Bean Dip – it’s so easy to make and so good to eat!

With just a few simple ingredients, most of which you’ve probably already got on your pantry shelves, you can create an absolutely delicious dip which your football-loving family and friends will LOVE!

There are many versions of this recipe, most of them similar to each other, but we think ours, with the addition of our mystery ingredient*, is the best. (Our second favorite is Cooking With Anne’s Black Bean and Corn Salsa. Delicious, Anne!)

Here’s how to make our version:

Ingredients:

1 15oz can black beans (rinsed or not – your call)
1 15oz can yellow corn (thoroughly drained)
1 14.5oz can diced tomatoes
1 cup chunky salsa (medium or hot)
1 large onion, diced
1 teaspoon cilantro
*1 mystery ingredient, revealed below

What to do:

Mix all of the above together in a large bowl. Add the mystery ingredient and blend it in. The mystery ingredient is what makes our version of black bean dip unique – and the best!

*Mystery ingredient: any of our Texas Pepper jellies! In fact, why not use a different flavor with each batch?

Awesome Football Food: Spicy Wings

Superbowl food Are you making a list of great football food? I’m sorry this picture isn’t all that great. I couldn’t keep my kids’ hands away from the wings long enough to get a good shot.

You don’t have long to wait for the big football game, you know.

Be sure to add Texas Spicy Wings to your menu; watching football just naturally requires some wings, you know.

Here’s how to make ours. They’re delicious.

Ingredients:

Chicken wings – about three pounds (adjust for your crew)
2 cups Apple Cherry Habanero Rib Candy
1 2-oz jar Apple Habanero pepper jelly
1/2 2-oz jar Cherry Jalapeno pepper jelly
1/4 pound tart cherries, seeded and quartered
4 tart apples (I use Granny Smith) peeled and cubed
Dash of chili powder

What to do:

Spread the chicken wings in a large deep baking pan.

In a large mixing bowl, mix together all the other ingredients. Your sauce will be lumpy.

Pour the mixture over the wings and make sure it covers all the meat. Use a pastry brush if you need to.

Bake in a 350 oven for about 45 minutes, or when the wings are tender.

Serve with toothpicks. And be ready to make another batch. These wings are absolutely DELICIOUS.

You can make these in your crockpot, too. Just dump everything in, set it to “low” and forget about it for about 6 hours.

Spicy Texas Cocktail Sausages For Your Couch Quarterbacks!

Craig Sharry | January 25, 2014

SuperBowl 14 food Spicy Texas Cocktail Sausages are yet another perfect football food, and so easy to make! Craig’s BBQ Sauce makes any recipe better!

Be sure you have plenty of toothpicks; cocktail sausages are more fun to eat when people can just spear them.

This recipe can be made in the oven or in your crockpot. Slow cooker dishes are so convenient, and I always make this recipe in my crockpot, but if you want to use your oven, that works just fine, too.

Ingredients:

>2 packages of cocktail sausages (I usually toss a packages of tiny hot dogs in with the sausages)
1 bottle of Craig’s BBQ Sauce
2 tablespoons apricot jam
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ground cloves
1 teaspoon allspice
dash salt
dash black pepper

What to do:

Drain the cocktail sausages and put them in your crockpot (or large casserole dish)SuperBowl food, Craig's BBQ Sauce

Put the barbecue sauce and apricot jam in a medium mixing bowl, and mix thoroughly. I use a wisk.
Add all the other ingredients, and pour over the sausages.
Turn your crockpot to “low,” and let everything cook for about six hours. (1 hour in a 350-degree oven)
If your crockpot has a lift-out crock, just remove it and place it on the coffee table in front of your football fans. Again, make sure there’s a box of toothpicks handy. Or forks, if you want to be civilized. Put a pot holder under the crock (or casserole dish) to protect your table.

Spicy Texas Cocktail Sausages are really, really good, plus, they’ll fill your whole house with awesome aroma. You have no idea until you do it, how good your house will smell.

You can also use this sauce for meatballs. Or as a condiment for sandwiches. Craig’s BBQ Sauce is really versatile.

However, there’s just something about the SuperBowl that requires BBQ sauce, isn’t there. Well, we think so!

Texas Pepper Jelly Presents: Butcher’s Prime Pot Roast

Craig Sharry | January 13, 2014

We like to experiment in the kitchen, and when my husband and kids mentioned that a nice beef pot roast would be good, in this cold, wet, blizardy, below-zero weather, I thought it would be a good time for me to try something I’d been thinking about for quite a while.

So I got the crockpot out of the pantry, took a frozen beef roast out of the freezer, and Butcher's Prime Pot Roast, crockpot dinnerstook a pack of Butchers Prime Brisket Injection from the spice rack. Oh, and an onion from the bin.

Bear in mind that this is NOT what is ordinarily done with a meat injection.

Here’s what I did:

Ingredients:

1 frozen beef roast, about three pounds
1 large onion, chopped
1 Butchers Prime Brisket Injection
Water, to cover the beef roast

What to do:

Put the beef roast in the slow cooker, and add water to cover it. Scatter the chopped onion over the water’s surface, and put the Butcher’s Prime Brisket Injection on top of it all.

Put the lid on the crockpot and set it on “low.” Set your timer for 10 hours. Go to bed. Or go to work.

As the meat heats and thaws, the flavor of the onion and the Butchers Prime will soak through the meat and permeate it with awesomesauce. That was the theory.

The actuality was that the theory was correct!

My family ate that pot roast like piranha on a cow’s hind leg. There was enough left for exactly one sandwich the next day, which my husband literally grabbed out of my hand and took to work with him.

Pot roast is always tender and delicious when made in a crockpot, but Butcher’s Prime Pot Roast was the best thing that’s hit our dinner table in a long time. So tender, we could cut it with a fork. So delicious, my family sounded like an orchestra tuning up while they gobbled it down.

Ordinarily, with a meat injection, you would, well, inject it into the meat. This time, I let the crockpot’s steamy slow heat soak gradually into the meat. Either way, you’ll have perfection on a plate.

It’s so easy and so much fun to experiment in your kitchen with Texas Pepper Jelly products. One of the best parts of that is that you can sample the products as you measure and use them. That’s because everything is easier and better and more fun if you have a slab of cream cheese covered with pepper jelly to dip crackers into while you work at other things.

Need a suggestion for next Sunday’s dinner? Consider your wish granted.

Texas Pepper Jelly: Stock Your Pantry & Fill That Crockpot

Craig Sharry | January 6, 2014

With temperatures in the negatives, there is nothing quite as wonderful as a crockpot full of Texas Habanero Chili and a pantry full of Texas Pepper Jelly products.

If I were you – any and all of you – I wouldn’t even put the crockpot away in weather like this. Just put it on the counter in a convenient spot and leave it there.

Tomorrow morning, fill that crockpot with Texas Habanero Chili, go to work, or back to bed, or to the living room to put your feet – covered warmly in thick socks – up. Winter has come in with a blast. Stay home and enjoy it. Fire up your laptop and order some Texas Pepper Jelly products. Stock up.

And have Texas Chili for dinner!

Ingredients:

1 cup chopped onion

1/2 cup chopped red bell pepper

1/2 cup chopped green bell pepper

1 minced garlic clove

4 cups tomato juice (or crushed tomatoes with juice)

2 15 oz cans black beans

1 15 oz cans chili beans

1 cup water

1/2 pound cooked ground beef, sausage, or a mixture – if desired. Or not. This chili is good vegetarian-style, too!

1/4 cup Craig’s BBQ Sauce

1 cup macaroni

What to do:

Throw all of the ingredients except the pasta into your crockpot, give them a quick stir, set the crockpot to “low,” and get on with your business. An hour before dinner is served, add the pasta.

Make a stack of grilled cheese sandwiches; they go great with any kind of soup.

Call everybody to dinner. Stand guard over the table until everyone is seated. I learned this one the hard way.

A Crockpot Full of Ribs, Chicken, and Craig’s BBQ Sauce!

Craig Sharry | December 28, 2013

Craig's BBQ Sauce, Texas Pepper Jelly, flaming bbq
There are a lot of good barbecue sauce brands out there; some of them might even be called great barbecue sauce brands.

Craig’s BBQ Sauce beats them all.

These cold winter days, there’s nothing like coming home to the aroma of a crockpot full of barbecued ribs, or chicken, and that aroma will be even better if Craig’s BBQ pork ribs, Texas Pepper Jelly, Craig's BBQ SauceBBQ Sauce is part of that crockpot’s contents. Slow cooker ribs are so tender you can cut them with the side of your fork. Slow cooker ribs are easy to turn into sandwich BBQ, if you’re lucky enough to have any leftovers – don’t count on that, though.

I usually toss a few chicken breasts into the crockpot along with the pork ribs. They enhance each others’ flavors, and the barbecue sauce turns everything you put in there into a fine dining experience.

Put a lot of napkins on the table. Barbecue done right will be messy. That’s part of the fun, so don’t get fussy at the table, y’all hear me? I make my family put on old t-shirts to eat good barbecue so I don’t have to worry. I’d make my husband wear a big bib if I could get by with it – he’s messier than the kids when it comes to barbecue.

crockpot bbq chicken and ribsCrockpot barbecue is one of the easiest things to make, too. Just throw some ribs and chicken into your crockpot, dump a half cup of diced onion on top, and pour about half a bottle of Craig’s BBQ Sauce over it all. Put the lid on the cooker and set it to “low,” and go to work. Or go to bed; I often do this at night. Seriously, the aroma spreads through the entire house and gives everybody good dreams.

Whatever recipe you decide to use, if it’s barbecue sauce you need, it’s Craig’s BBQ Sauce you need to use. There’s simply none better. None. Zip. Zero.

This is the best barbecue sauce ever created.
