Spicy Crockpot Peach Cobbler

crockpot peach cobbler, hot summer weatherIt’s too hot to fire up your oven, so get out your slow cooker and let’s make some spicy peach cobbler!

Your crockpot is your kitchen’s best friend in hot weather; not only does it do the work of your stove/oven, it does it beautifully and doesn’t mess with your home’s air conditioning!

Your family will love Texas Pepper Jelly’s Spicy Crockpot Peach Cobbler. We promise.

Ingredients:

Four cups sliced peaches (Fresh or frozen) (Peeled.)
1/2 cup sugar (I use Splenda)
One 2-oz jar of Peach Habanero Pepper Jelly

One cup Bisquick
1/2 cup sugar (Splenda works)
1 cup milk (I use skim)

What to do:

In a six-quart slow cooker, mix the peaches, 1/2 cup sugar, and pepper jelly.

In a medium bowl, mix together the Bisquick, 1/2 cup sugar, and milk. Get all the lumps out.

Pour the Bisquick mixture over the peach mixture in the crockpot, turn it on “low,” and set your timer for three hours.

After three hours, check to make sure the peaches are “done” and the crust looks good. This is called the cobbler’s being “set.”

Serve with whipped cream, Cool Whip, or ice cream.

I promised not to tell anybody that my husband eats this for breakfast. Shhh, it’s a secret.

How To Give Boring People A Kick

Texas Pepper Jelly strawberry habanero pepper jelly Here is a little hint that is so simple and yet so awesome! Once you start doing this, you’ll never go back. You won’t want to, and your family would call you on it if you did.

Some people (not anyone in my house but, you know, some people) prefer their jellies to be a tiny little bit more on the bland side, yet with still that little kick of Texas Pepper Jelly flair. So, here’s what you do about them.

Take a 2 oz. jar of Texas Pepper Jelly and a two cups of regular ordinary plain ol’ bought-at-the-store jelly of the same flavor, and mix ’em together. There. Jelly with a little bit of a kick.

My family would kill me if I did this, but hey. Some people prefer bland to spicy, yet they still want a little bit of a kick. I do this for my sister and her family, who are obviously not as cool as you but they’re trying.

I usually use strawberry jam and Strawberry Habanero pepper jelly. Why? Well, they love strawberries. And they love strawberry jam. And they love just a little kick.

And now you know exactly how to give them that kick.

Texas Pepper Jelly’s Spicy Supreme Queso!

We know you’ve had some mighty good queso in your time, but we want to tell you something: you haven’t had the BEST queso until you’ve tried Texas Pepper Jelly’s Spicy Supreme Queso. There is no better queso, and we’re not exaggerating.

This queso will make you cry with joy. And maybe a little with spiciness, but that’s just part of the DELICIOUSNESS of it.

Get in the car and go buy some fresh dippers – veggies, chips, tortillas, whatever. This queso is great with anything you dip into it.

My husband accidentally dropped a candy bar in it – he fished it out and said it was fantastic. I haven’t tried it with chocolate, but it’s only a matter of time.

Ingredients:

1 block (32 Oz. Block) Velveeta Cheese (Don’t use a substitute; it won’t melt right)
1 package (8 Oz. Package) Cream Cheese (I use Neufchatel)
1 can (10 Oz. Can) Rotel
1/2 cup Loco Cheese Dip
1 can (10.75 Oz. Can) Cream Of Mushroom Soup, undiluted
1 pound Ground Beef OR Sausage (or A Combination Of Both) (I use both) (Crumble the cooked meat THOROUGHLY!)

What to do:

Brown ground beef or sausage (or both) in a pan over medium heat, drain well, crumble completely, and set aside. Cut up the Velveeta and cream cheese into small cubes and place into a crock pot. Pour in the Rotel, Loco Cheese Dip, and the cream of mushroom soup, and stir ingredients together. It’ll be very lumpy.

Turn your crockpot on “low,” and set your timer for one hour; this should be long enough for all the cheese to melt. Add the browned and crumbled meat and continue to let cook on low, stirring every hour or so, as needed. You don’t want it to scorch on the bottom; this is unlikely in a crockpot, but it can happen if you’re not cautious.

Pour into a heat-resistant bowl, and stand back. Your crowd will start dipping before it’s even cool enough to eat! (If you can get away with it, try to reserve a little for yourself, for later tonight or tomorrow. There won’t be any left in the bowl you set out for other people.)

A Red, White, and Blue Salsa for your 4th of July Cookout!

Red, white, and blue salsa, pepper jellyIndependence Day – Fourth of July – is coming up soon; it’ll be here before we know it! Since many of us have a traditional holiday cookout on this important day, let’s try to create some traditions for people to look forward to, food-wise! Texas Pepper Jelly’s delicious red, white, and blue salsa is made and meant for your Glorious Fourth of July get-together, and we thank all of you who have told us you liked it, and those of you who keep requesting it around this time of year!

Be ready for a few tradition-breakers when it comes to our special Fourth of July salsa, though. For most people, “salsa” brings to mind something red. Not this salsa. Texas Pepper Jelly’s amazing red, white, and blue salsa is an exception to THAT rule! It’s still considered a “salsa,” in spite of its uniqueness.

Texas Pepper Jelly’s July 4th salsa is a fruit salsa. When you serve it on ordinary days – then again, is any day “ordinary” if you’ve sharing your Texas Pepper Jelly product? – we call it simply Spicy Fruit Salsa. On Independence Day, however, when red, white, and blue is all around us, we call it Red, White, and Blue Salsa. Simple enough!

Spicy Fruit Salsa is perfect for these hot summer days; it’s cool and refreshing, and there’s just something about fruit that quenches thirst at a glance.

Ingredients:

2 kiwis, peeled and diced
2 Granny Smith apples, peeled, cored, and diced (any kind of apple will do, but Granny Smith apples are our favorites)
1 cup of raspberries or blackberries (I use both when I have them)
1 1/2 cups of strawberries, diced
1 cup of green seedless grapes, halved
1/2 cup of blueberries
2 tablespoons of brown sugar
1/4 cup of Apple Habanero pepper jelly
1/4 cup of Strawberry Habanero pepper jelly

What to do:

Put all of the above ingredients in a large mixing bowl and, stirring gently, mix thoroughly. Refrigerate overnight, or at least a few hours.

Put it on the table and step back.

This salsa is delicious no matter what’s dipped into it or what it’s poured onto (ice cream is a gourmet dessert in combination with our salsa; heck, my husband just spoons it into his mouth as if it were cereal.

Oh, and speaking of this salsa and your cereal – in the unlikely event that you’ve got some left over in the morning, it’s AWESOME on your cereal. Any cereal.

Father’s Day Cookout!

TPJ grillerguy We’re assuming something, but we think it’s true – if ever there was ever an “official” day to grill out, it would be Father’s Day, wouldn’t it! Fourth of July comes in a close second, but we’ll get to THAT holiday in a minute.

The forecast here is for sunshine; in other words, it’s going to be perfect cookout weather. That’s good, because this is the weekend when families all over the nation will be outdoors, watching Dad grill, and devouring the results. Whether your dad’s specialty is simply burgers and dogs, or whether your dad ventures into the area of ribs, briskets, chicken, and other delicious meats, there’s something about food cooked on a grill, outdoors, that makes us drool just to think about it. Texas Pepper Jelly understands this about people, and we’ve got something for everybody!

Fact: People have bigger appetites when they eat outdoors, and foods cooked on an outdoor grill have a fragrance that nothing else can compete with. If you don’t believe it, just think for a minute and remember how the very air smells when your neighbors are grilling out, and how “other people’s meals” can inspire you to fire up your own grill.

This Father’s Day, we here at Texas Pepper Jelly hope you and your family have a wonderful, safe, yummy day, with all the people you love best. If you are fortunate enough to still have your father, and if you are even MORE fortunate to have a father who loves to cook outdoors, we hope you will count your blessings, and perhaps even share him with friends who have lost their fathers.

Father's Day cookout, Fourth of July cookout It might not be officially summer yet (that’s not until June 21st!) but summer cookouts have begun, for sure. Father’s Day is Sunday the 14th, and, weather permitting, that’s always a good day for a cookout. And it isn’t all that long afterwards that it will be time for the biggest cookout day of the summer – July 4th, Independence Day.

Father’s Day Cookouts and Spicy Apple Pies

Father’s Day is June 16th, so it’s time to order your cookout supplies if you haven’t already done so.

What’s a cookout without Texas Pepper Jelly’s Rib Candy? To be on the safe side, maybe you’d better order several different flavors, so everyone at the cookout can have his favorite. In the meantime, why not make a spicy apple pie? There’s nothing like the aroma of baking apple pie to make everyone in your house feel at home, and Texas Pepper Jelly’s spicy apple pie will be the best, most delicious pie you’ve ever tasted!

Ingredients:

10 Granny Smith apples, peeled and sliced thin
3/4 cup sugar (I use Splenda)
1 teaspoon cinnamon
Tiny dash of salt
5 square pats of butter
1/4 cup Texas Pepper Jelly’s Apple Cinnamon Rib Candy
Top and bottom pie crust (I buy mine at the store, or you can make it from scratch if you’re more ambitious than I am.)

What to do:

Preheat your oven to 425.

Put the bottom crust in the pie pan. Fill it with sliced apples.

Sprinkle the sugar, salt, and cinnamon over the top of the apples. Don’t mix.

Pour the Rib Candy over the sugary sprinkles.

Put the butter pats on top of it all: four near the edges and one in the middle.

Again, don’t mix.

Cover with top crust, and decorate it as you want. I always carve “TA” into the top crust, for “Tis apple.” (I read it in a book and liked it.)

Bake at 425 for 20 minutes. Reduce heat to 350 and bake for about 50 minutes. (I check every five minutes or so after that)

Let the pie “set up” for about a half hour before serving.

You’ll never make an apple pie any other way again. I haven’t. My family would rise up and make me promise to use Rib Candy forever after.

Memorial Day Suggestions and Recipes!

Memorial Day, Texas style

Memorial Day weekend is upon us – the weekend of family reunions, get-togethers, picnics, cookouts, family, friends, all linked together with memories and fantastic food.

The traditional Memorial Day meal is a cookout, naturally. By this time, we’ve all used our grills and mad outdoor cooking skills several times – we hope. This weekend is really special, though. Memorial Day. Our reunions will be filled with beloved people who are there in body and people who are there in spirit and memory.

And, there will be food. Exceptionally delicious food, too. Here are some of Texas Pepper Jelly’s most beloved picnic recipes.

First of all, the meat. Grilled outdoors, covered with homemade BBQ sauce, Texas Pepper Jelly or Rib Candy, injected with Butcher’s best, and grilled to perfection, over charcoal or gas. Remember, lean meats grill best, as there isn’t as much fat to drip down and cause flareups, and thinner glazes aren’t as likely to burn.

What’s a picnic without Pineapple Sweet Fire Potato Salad, after all?

Don’t count on having any Texas Pepper Jelly cole slaw left over for tomorrow.

Got a few vegetarians at your cookout? Don’t worry – we’ve got some great recipes for a vegetarian cookout, too!

You can’t have a cookout without baked beans!

For dessert, Texas Pepper Jelly has several awesome recipes for all kinds of pies and cakes, but for an outdoor cookout, why not let your guests make their own ice cream in a baggie? It’s fun and delicious, and each guest can add the pepper jelly, fruit, or whatever that they individually prefer! (We like it best with pepper jelly and diced fruit.)

Add these fabulous, delicious Texas Pepper Jelly recipes to the outdoor buffet, let your guests place their contributions there, too, and see which pans empty out the fastest. We’re betting on ours, although anything Grandma brings will come in a close second.
