Memorial Day Grillin’

Memorial Day 2017 is Monday, May 29, and that’s just a week away. It’s time to start getting ready for that Memorial Day cookout!

For me, Step One is uncovering the grill and cleaning it thoroughly. We cleaned it when we covered it for the winter, but it’s really important that the grill be clean when you start the season. After all, you’ll be eating food that touched that grill!

Most avid cookout people have a gas grill, but we still cling to our charcoal grill. Charcoal is naturally “dirtier” than gas, so maybe that’s the reason for my obsession with a clean grill.

Step Two is stocking up on Texas Pepper Jelly products. After all, no cookout is complete without them! Craig’s BBQ Sauce, various pepper jellies, Rib Candy, the BBQ injections, etc. . . we stockpile them all because we use them all. And we use them all because our family expects them all, and insists on them all!

Our blog is full of recipes, for cookouts and for kitchen foods. All of our recipes use at least one Texas Pepper Jelly product. All of our cookout recipes work for any kind of grill – whether you’ve got a charcoal grill like mine, or a six-burner deluxe gas grill, or a tiny hibachi. It’s another cold day, so tonight we’re having BBQ chicken, baked beans, corn on the cob, and yeast rolls. I only use Craig’s BBQ Sauce, and I like making yeast breads. (Kneading bread is excellent physical and mental therapy) I don’t know how to cook for two, so there’s always a lot. Come on over. (I really do know how to cook for two, but there’s no fun in it.) (Cooking for a crowd is one of my favorite things.) (The house smells wonderful, already.)

Leftover Easter Ham? No Problem!

Did you bake our awesome spicy pepper jelly-glazed ham for Easter? If you did, and if you are lucky enough to have some left over, you’ve got a feast for the next few days, too.

As far as my family is concerned, Easter dinner requires a big baked ham, and whenever I bake a ham, I glaze it with Texas Pepper Jelly. What flavor? It depends. We’ve tried several and loved them all. This year, however, I used Pineapple Habanero.

Today, the day after Easter, we had leftovers for dinner, and my family loves Easter leftovers better than Thanksgiving leftovers. So we heated up the leftover ham, and spread a little more Pineapple Habanero on it. We got the leftover dyed eggs out of the refrigerator and turned them into deviled eggs – just add some pepper jelly to the crushed yellows, along with your usual recipe.

The point is, Easter leftovers are delicious, and Texas Pepper Jelly makes them even more delicious. Remember, too, that all of the flavors work with baked ham! Sometimes I use Cherry Habanero and stick cherries all over the ham.

Happy Easter From Texas Pepper Jelly!

There’s nothing like a nice big baked ham for Easter dinner, is there? And if you think you’ve had some tasty ham before, just you wait until this year. Texas Pepper Jelly’s Pineapple Habanero Ham is the most awesomely delicious ham you and your family have ever tasted in all your lives, now and forever.

It’s easy, too. Super easy.

Just buy a big baked ham, a can of pineapple rings, and some Texas Pepper Jelly’s Pineapple Habanero.

Line a big sided baking pan with aluminum foil. Place the ham (be sure to get all the plastic wrap off it!) in the pan on the foil. Brush the ham all over with pepper jelly, and start sticking the pineapple rings all over it with toothpicks. Fasten a cherry in the middle of each pineapple ring if your family likes cherries. If you’ve got some pepper jelly left over, spoon it onto the top of the ham. (It’ll melt and trickle down all through the pineapple rings and make your ham even MORE delicious!) (Use Cherry Jalapeno -or Cherry Habanero – if you put cherries on your ham.)

Put the ham in a cold oven and set it to 350. Your ham is already baked, so all you’re really doing is heating it up and “setting” the glaze. Bake the ham about 15 minutes per pound, so you’ll have to do a little math. 🙂

When the ham is done, remove it from the oven and, while it’s still on the foil in the pan, pour a little more pepper jelly over it. Let it “set” for about 20 minutes, then remove and put on a platter. Slice. Serve. Step back. If you’re counting on leftovers so you can make a sandwich tomorrow, you’d better steal a few slices, put them in a baggie, and hide them behind the ketchup bottle in your fridge.

This ham is delicious. Absolutely delicious. And isn’t it easy? I told you it was easy.

Texas Pepper Jelly and the Best Snack EVER

I’ve been recovering from a serious automobile accident, and let me tell you something about snacking when you have trouble standing up and walking across a room: There is nothing that hits the spot like a simple brick of Neufchatel cheese covered with Pineapple Habanero Pepper Jelly.

For the past several days, I’ve been working on mine, and there’s not much left right now. You know what this means, right?

Tomorrow morning I have to limp into the kitchen, open up another brick of cream cheese and another jar of Texas Pepper Jelly, find the box of Ritz crackers, put it all on a little tray, and bring it back into the TV room where I have been as good as imprisoned for the past few months thanks to an underinsured driver who ran a light whilst on her cell phone.

Remind me to call my own insurance agent and upgrade my policy, while you’re at it.

Man, this Texas Pepper Jelly on cream cheese (or Neufchatel, which tastes exactly the same with half the calories) is the best snack ever. Pineapple Habanero today; Raspberry Habanero tomorrow. Next week, who knows?

It’s just such a wonderful and delicious and not-as-fattening-as-candy snack, and it can sit for hours and hours on a TV tray in a sickroom and still be delicious. The nutritious part is just icing on the cake, speaking of which, Texas Pepper Jelly makes great icing for cakes, too.

Cake. Mmmmmmmm.
