A Feast of Fridays: Spicy Crockpot Enchiladas

feastoffridays It’s going to be over a hundred degrees here this weekend, and turning on the oven or even the stovetop is the last thing I want to do! So, out comes my faithful trusty crockpot, because the weather outside is never an excuse for not being able to prepare a nutritious, delicious hot meal for our families!

crockpotpepperjellyThis recipe for Spicy Crockpot Enchiladas is easy and will become one of your family’s favorite weekend meals.

Ingredients:

1 pound hamburger, uncooked but not frozen
12 ounces Texas Pepper Jelly, any flavor
1 cup corn (if you use canned, be sure you drain it thoroughly!)
1 cup black beans (again, if you’re using canned, drain well!)
2 cups red enchilada sauce (canned is fine)
3 ounces of cream cheese
1 store-bought packet of enchilada seasoning (the easy way, I know)
1 cup any kind of shredded cheese – just use your family’s favorite
1 tablespoon freshly squeezed lemon juice
1 tablespoon Worcestershire sauce
3 teaspoons garlic powder
1 teaspoon paprika
3 teaspoons onion powder
Dash of cumin
Dash of parsley
Dash of chives
Tortillas

It looks like a lot of ingredients, I know, but the instructions are so simple, it’s really no big deal.

What to do:

Throw everything in your crockpot except the cream cheese, shredded cheese, and tortillas. Mix it up – you’ll probably have to use your hands.

Place the lid on your crockpot, set it on “high,” and go to work. When you get home, six or so hours later, turn off the crockpot. With a large slotted spoon (so you can strain out the grease) dip out the enchilada filling and put it in a big bowl.

Set the table, put the bowl of enchilada filling in the middle, and give everyone a pile of tortillas. Stand back.

Serve a salad with this if you want, but my family prefers to just set to with the enchiladas themselves.

This is a messy meal, but who cares? Friday night is bath night anyway, right?

With this meal, I serve whatever kind of fruit the Texas Pepper Jelly is, for dessert. Tonight, we had bowls of fresh strawberries to go with the Strawberry Habanero pepper jelly I used.

Spicy Zucchini Relish

zucchini Believe it or not, zucchini was once considered a hard-to-find, almost exotic, vegetable! Now, of course, our gardens produce so much zucchini that we make jokes about leaving bushel baskets full on our neighbors’ porches after dark!

With so much zucchini at our disposal, the possibilities for tasty dishes are almost endless. Zucchini is so versatile – we can eat it for breakfast, lunch, dinner, and dessert – and this time of year, many of us are doing all four.

Homemade relishes are always delicious and welcome at the table, and Texas Pepper Jelly’s homemade spicy zucchini relish will become one of your family’s favorites – yes, it’s just that yummy!

Ingredients:

1 pound finely chopped zucchini – peeled or unpeeled, your choice. I don’t peel it because I like the colors.

1/2 cup cider vinegar

1/4 cup sugar – Splenda works fine, too.

2 teaspoons mustard seeds

1/2 cup salt

1/4 cup pepper jelly, any flavor

1/4 cup chopped fruit to match the pepper jelly

What to do:

In a large saucepan, mix everything except the zucchini and bring to a boil, stirring constantly. After the mixture starts boiling, stir in the chopped zucchini, still stirring constantly Simmer for about 10 minutes and transfer to an airtight container. Keep in the refrigerator!

This relish will keep for about a week, although it won’t last nearly that long so you really don’t have to worry about storing in the ‘fridge for very long.

Spicy Zucchini Relish is delicious on anything and everything you’d use any other relish for.

You can also can or freeze this recipe, although my family likes it best when it’s absolutely fresh off the stove.

Apricot Habanero Sweet & Sour Meatballs!

I have always used apricot jam added to bottled barbecue sauce when I made sweet and sour meatballs to take to parties and family reunions. Now that Texas Pepper Jelly has Apricot Habanero Pepper Jelly, however, I’ve changed my recipe.

Now I’ll be taking sweet, sour, and hot meatballs to parties and family reunions.

If you thought sweet & sour barbecue sauce was good, just wait until you wrap your taste buds around that same simple recipe made with Apricot Habanero pepper jelly instead of plain ordinary apricot jam!

Just add about 1/2 cup of Apricot Habanero to one average-sized jar of bottled barbecue sauce, pour it over a baking dish full of meatballs – make your own or buy a package of frozen – bake until the sauce is bubbly, and set it on the table with a big spoon in it.

Then stand back.

I put a box of toothpicks on the table for people who like to spear their meatballs instead of forking them.

This recipe makes a dish that will make your entire house smell so wonderful, strangers will come to the door and beg for a taste.

This is also a GREAT recipe for your crockpot. These hot summer days, in fact, I recommend putting the mixture in your crockpot. That way, your oven won’t be heating up your whole house.

Did I mention that however you choose to make this recipe, your house will smell like a dream? I did? Well, I’m mentioning it again. Mmmmm, barbecue. . . .

Super Easy Pepper Jelly Doughnuts!

jellydoughnut There are lots of great recipes for jelly doughnuts, but most of them involve yeast, which requires TIME. These recipes are delicious, but say goodbye to your entire morning or afternoon!

Texas Pepper Jelly can offer you an alternative: really quick, really good, really easy Pepper Jelly Doughnuts.

Ingredients:

1 tube of canned biscuits
Approx. 1/4 cup sugar
Pepper Jelly – flavor of your choice
2 cups of canola oil – don’t panic; it doesn’t go in the doughnuts!

What to do:

Put the pepper jelly in an icing piper – or put it in an envelope and cut off one corner.

Put the canola oil in a saucepan or skillet and heat until a drop of water sizzles.

Open the can of biscuits and slice each biscuit in half. Drop each half into the hot oil and deep fry until golden brown. Don’t leave the stove! Remove golden biscuits with tongs and coat with sugar. While still hot, inject the pepper jelly into the doughnut.

Let them cool – they’re delicious hot, but they don’t hold together until they’ve “set” for a bit.

Your family and friends will discover a world of spicy sweet goodness with every bite!

(Canned biscuits make excellent pizza crust!)

Peaches and Pepper Jelly

peaches I’ve been chowing down on fresh peaches and Texas Pepper Jelly’s Peach Habanero pepper jelly all weekend, and I’m not finished with it yet.

In this heat, this is just the most perfect snack ever. And, like many perfect snacks, the simplicity of it makes it even more perfect!

Just cut up a couple of fresh peaches and mix them in a cereal bowl with some Peach Habanero pepper jelly and put the bowl in the refrigerator. A couple of hours later, start eating. You’ll think you died and went to heaven.

Texas Sandwich Spread

jalapenos Who wants to cook in triple-digit weather? It’s been so hot here, even the outdoor grill puts out too much heat to bear up under.

On hot, humid summer days, a cold lunch is the best lunch. Texas Pepper Jelly’s sandwich spread is delicious, easy, economical, and nutritious. Why not mix some up, spread it on bread or dip raw veggies into it, slice a peach, brew some ice cold tea, and have the perfect summer meal?

Ingredients:

1 1/2 cups minced cooked ham
1/4 cup Texas Rib Candy (any flavor)
2 tablespoons dill pickle relish
Worcestershire sauce to taste (I use 1/2 teaspoon)
2 to 3 tablespoons mayonnaise (Start small and add until it’s the consistency you want)

What to do:

Mix all of the ingredients in a bowl and put it in the refrigerator. When the mixture is cold, spread it on bread, or dip your garden produce in it.

I like to mix some hard grated cheese in mine, but my kids prefer it without.

Grilling in the Heat!

grill We’re in the midst of some dangerous heat advisories, and few people around these parts want to fire up the oven or even the stove-top right now. Hot as it might be outside, it’s NEVER too hot to grill outdoors, and this weather is the perfect excuse – as if any of us needed an excuse – to thaw out some chicken and ribs and invite some people over for dinner.

Whether your grill uses charcoal or gas, anything cooked on it will taste far better than the same thing cooked inside on a convention stove. Don’t get me wrong – meat is delicious cooked indoors, but let’s face it: meat cooked outdoors on your grill, with some Texas Pepper Jelly or Rib Candy or Bird Bath is going to be delicious beyond all comprehension or description.

So throw together some Spicy Potato Salad, some Pineapple Habanero Cole Slaw, ask your guests to bring some cake, and have a feast.

P.S. Don’t be afraid to stir some pepper jelly into your cold drinks – and it doesn’t matter what kind of drinks you’re having, either. You know what I’m tellin’ ya. . . .

There’s Always Room For Jello – Especially If You Add Pepper Jelly!

Texas Pepper Jelly Icon, spicy, barbecue sauce, grilling, cookout Yesterday was Independence Day, and many of you had reunions or other parties, and at many of those reunions or other parties, there were cookouts! We’re hoping things went well, with no accidents, and with a lot of full bellies.

We also hope many of you used Texas Pepper Jelly products.

There are many uses for all of our products, and some of those uses are things you might not think of.

For example, have you made Jello with Texas Pepper Jelly yet? It’s easy to do, and the addition of a little pepper jelly turns an ordinary dessert into something special!

Just add a tablespoon of pepper jelly to your Jello and mix as the directions tell you to. If you add some fruit, try to match it to the pepper jelly.

Pepper jelly jello layersAdd the fruit after the Jello has “set up” for an hour or so in the refrigerator. (This works GREAT for all fruits & flavors of pepper jelly EXCEPT pineapple.)

My family loves Jello layers, each layer made with a different pepper jelly.

Vegetarians Love Cookouts, Too!

grill Even if you’re a vegetarian, you can still enjoy delicious grilled “meat substitutes.” Portobello mushrooms are yummy good, and a thick slice, slathered with Texas Pepper Jelly or Rib Candy, is every bit as tasty as a burger!

Ingredients:

4 portobello caps, stems and gills removedportobellob
1/2 cup Texas Pepper Jelly or Rib Candy – or BOTH! (flavors of your choice!)
1 minced garlic clove
1/2 teaspoon of kosher salt
buns, sourdough bread, really any kind of sandwich bread
1/4 cup feta cheese
1/2 teaspoon oregano
mixed greens

What to do:

Prepare your charcoal, or preheat your grill to medium-high. Mash the garlic and salt until you’ve got a smooth paste. Mix this paste with the pepper jelly or Rib Candy, and brush both sides of the mushrooms with the mixture.

Combine the feta cheese and oregano, and toss with the greens. Toast the bread or buns until crisp.

Put a grilled mushroom top-side down on the bread. Top with the greens mixture, and cap with the other slice of bread.

Yum.

You might want to grill more than these four portobellos, too. People who aren’t even vegetarians will want to try them, and you’ll need plenty.
