It’s time for another Texas-style football recipe!


One of our most popular recipes is our Black Bean Dip – it’s so easy to make and so good to eat!

With just a few simple ingredients, most of which you’ve probably already got on your pantry shelves, you can create an absolutely delicious dip which your football-loving family and friends will LOVE!

There are many versions of this recipe, most of them similar to each other, but we think ours, with the addition of our mystery ingredient*, is the best.

Here’s how to make our version:

Ingredients:

1 15oz can black beans (rinsed or not – your call)
1 15oz can yellow corn (thoroughly drained)
1 14.5oz can diced tomatoes
1 cup chunky salsa (medium or hot)
1 large onion, diced
1 teaspoon cilantro
*1 mystery ingredient, revealed below

What to do:

Mix all of the above together in a large bowl. Add the mystery ingredient and blend it in. The mystery ingredient is what makes our version of black bean dip unique – and the best!

*Mystery ingredient: any of our Texas Pepper jellies! In fact, why not use a different flavor with each batch?

Football Season Means Football Food!

Football season means great food and great sport! Football season has started, and some people don’t know which they love most: the game or the food! Whether you’re tailgating or watching from the sofa, football season means awesome food!

We have many different recipes for Texas-type meatballs, so be on the watch! Football season is perfect meatball season.

This recipe for Loaded Texas Meatballs will become a favorite with your family and anyone lucky enough to eat watch the game with you. You don’t even need a fork; just bring along some toothpicks!

You can use any flavor of Texas Bird Bath, by the way. Why not try it a different way each time you make it? There will be more than one football game, you know. 🙂

Meatballs can be either homemade or store-bought, but just in case you’re a purist, here’s the recipe we use for homemade.

Ingredients:

For the meatballs:

1 pound ground beef
1/4 pound ground sausage
2 eggs
1/4 cup flour
1/2 teaspoon salt (don’t leave it out!)
1/4 teaspoon black pepper
1/2 cup finely shredded sharp cheddar cheese
1 teaspoon ground cumin
1 teaspoon garlic powder
3 teaspoon Texas Bird Bath

For the topping:

1/4 cup Bird Bath
14 cup shredded cheddar cheese
16 pickled jalapeno slices
1 tbs sour cream

What to do:

If you’re using store-bought, frozen meatballs, arrange them on a big cookie sheet and bake just long enough to completely thaw them. Then proceed directly to the next step. If you’re going to make the meatballs from scratch, follow the next set of directions.

If you’re going to make homemade meatballs, get out a large bowl. In this bowl, combine all of the meatball ingredients and mix thoroughly. Form into 16-20 meatballs. Put the meatballs on a cookie sheet with low sides, and bake for 15 minutes at 400 degrees. Remove from oven and drain thoroughly.

Once drained and cool enough, arrange the meatballs on an ovenproof serving dish. Top each meatball with a teaspoon of Bird Bath and a teaspoon of shredded cheese. Place under the broiler until the cheese is melted – about a minute. Remove from the oven and top each meatball with a dab of sour cream and a slice of pickled jalapeno.

Any Texas Pepper Jelly product will work with this recipe, so if you’d like to try any of our Rib Candy flavors or pepper jellies, give it a go! We’ve made these meatballs in many different ways and they’ve all been delicious!

I always double or triple this recipe when we’re having people over, though. The meatballs are big, but most people want a lot of them.

Stick a toothpick into each meatball and serve!

Sweet Pineapple Upside-Down Cake!

To make our fantastic Sweet Pineapple Upside Down Cake, just substitute Texas Pepper Jelly’s Sweet Pineapple Rib Candy for the milk!

Ingredients:

1 box yellow cake mix
4 eggs
1 cup Pineapple Sweet Rib Candy

1/2 stick butter (softened but not melted)
1 can crushed pineapple
1 cup brown sugar
1 jar maraschino cherries

What to do:

In a large mixing bowl, add the cake mix, eggs, Rib Candy, butter, and the juice from the cane of pineapple. Mix well.

In a large buttered baking pan, spread the crushed pineapple and brown sugar. Dot with the cherries, and pour the batter over this.

Bake in a 350 oven for 20 minutes. Lower temperature to 325 and bake another fifteen minutes or until a toothpick comes out clean.

Let cool for a half hour, and turn pan over onto a large cookie pan.

Let the cake “set” for another half hour, and then fall to it!

It’s Too Darn Hot Out There!

There’s an old Broadway song called “Too Darn Hot.” It’s from the musical Kiss Me Kate and it’s about how when it’s really hot outside, a person just doesn’t feel much like doing anything, let alone cook.

Right now, it’s 98 degrees out there, and the humidity is so intense, it’s like swimming through the air whenever I try to go outside. This is no weather to fire up a stove or oven or grill, inside or out. We can’t eat in restaurants ALL the time, although some people do, but we still have to eat. Our children need to eat!

Therefore, it’s perfect crockpot season.
