Texas Tip: Spicy Holiday Dressings

texaspepperjellytipsThanksgiving is only a month away!  Some of us are already starting to plan our menus.

This year, I’m jazzing up the dressing a notch by adding  some Texas Pepper Jelly’s grilling and finishing sauces to the mix.  Dressing is delicious with apples, so it stands to reason it will be even better with Apple Cinnamon Grilling and Finishing Sauce.  (I’m currently obsessed with this product; it’s just simply delicious – and SO VERSATILE!)

I’m also going to try a batch of dressing with a little Cherry Habanero grilling and finishing sauce.  It just seems like it will be soooo good.

Making dressing is an excellent opportunity to do a little kitchen-experimenting, you know.  I’ve discovered some of my best dressing recipes by trial and error.

When I use any of the Texas Pepper Jelly products, however, EVERY experiment is successful.  Heck, those grilling and finishing sauces are even delicious over ice cream!

Monday Munchies: Nacho Dip – Texas Style

When I make Texas Pepper Jelly’s Texas Style Nacho Dip, it lasts MAYBE a half hour. My son, all by himself, can finish off an entire batch in one night. Your family will love this fantastic spicy dip, too.

Before you start mixing things together, get out your crockpot.  Yes, this is another Texas Pepper Jelly Slow-Cooker Delight!

Ingredients:

1 pound of cooked hamburger, well-drained                 crockpotpepperjelly

1 teaspoon garlic powder

2 12-ounce jars of Texas Habanero salsa

15-ounce can of refried beans

1 1/2 cups sour cream

3 cups shredded cheese, whatever kind your family likes (I use sharp cheddar)

Several bags of assorted chips – my son prefers tortilla chips

What to do:

Throw everything except the one cup of the cheese and the chips into your crockpot, cover, and turn the dial to “low.”  Let it cook for about two hours.

Just before serving, sprinkle the remaining cup of cheese over it.

Open the bags of chips and stand back.  Don’t count on any leftovers.

A Feast of Fridays: Big Bean Blast

feastoffridaysEverybody in your family will love Big Bean Blast – even the little kids! The cook in your home will love it, too, and not just because it’s simple, inexpensive, and very nutritious.

It’s also one of Texas Pepper Jelly’s extremely easy Crock Pot Meals!

Ingredients:                                                    crockpotpepperjelly

1 cup chopped onion

1 minced garlic clove

3 cups cooked (or canned) large lima or butter beans – or both – drained and rinsed

1 28-ounce can diced tomatoes, plus all of the juice

1 bottle of Texas Pepper Jelly’s Sweet Ginger Garlic Habanero Hot Sauce

salt and pepper to personal taste

What to do:

Dump it all into your crockpot and set the dial to “low.” Go to work, or to the mall, or just take a nap. The point is, you don’t have to hang around the kitchen; let the crockpot do all of the work and worry about dinner.

When everybody comes home from work or school, dip up a bowl of Big Bean Blast for each and stand back.

Eating this is a blast. You’ll really understand the name of this dish later that night, though.

Totally worth it. TOTALLY WORTH IT!

Fix a big pan of cornbread to go with the Big Bean Blast, and you’ve got a MEAL.

Texas Cookin’ Tips: Steak Sprinkle!

Monday Munchies: Zesty Crunchy Zucchini Coins

mondaymunchiesThis time of year, people are buried alive in zucchini, but once they try Texas Pepper Jelly’s Zesty Crunchy Zucchini Coins, that tall mound of zucchini will start getting smaller, because your family will want a plate of these within arm’s reach ALL THE TIME!  Oh, this recipe is soooo much fun! Not only is it fun to make, it’s even more fun to eat!  Children love it, too, and that’s fantastic, because zucchini is so good for them.

Ingredients:

3 medium zucchini squashes

1/4 cup finely chopped green onions

3 tablespoons parmesian cheese

1/8 teaspoon garlic powder

1/3 cup bread crumbs – cracker crumbs work, too

1 cup Texas Pineapple Habanero pepper jelly

What to do:

Cut the zucchini into “coins,” and steam them in the microwave for about three minutes, or until just barely tender.  They’re watery, so drain them thoroughly and let them cool.

Mix together everything else except the bread crumbs.  Dip each zucchini coin into the pepper jelly mixture, and then coat with the bread crumbs.

Put them on a foil-lined cookie sheet, and broil them in your oven – not the microwave! – until lightly browned; this will take only a few minutes, so watch them closely.

This is a good recipe for children to help make; it’s so easy, and will also show them another vegetable that’s fun and tasty, too.

Zesty Crunchy Zucchini Coins are also a good party appetizer, as well as a nutritious after-school snack, football-watching snack, or just about any other reason you can think of.  They’re also awesome when there’s no “occasion” at all!

A Feast of Fridays: Hot Vidalia Onion Pineapple dip

feastoffridaysOh, this hot dip is FANTASTIC!

Ingredients:

5 cups coarsely chopped Vidalia onions

2 cups sharp cheddar cheese, shredded

3 tablespoons butter

1 cup Miracle Whip or mayo  (My family prefers Miracle Whip)

2 minced garlic cloves

1/2 cup Pineapple Habanero Pepper Jelly

1 teaspoon Chipotle Habanero Hot Sauce

What to do:

Saute the onions in the butter.  In a medium bowl, stir together all of the other ingredients.  Let the onions cool a little bit, and add them to the bowl with everything else.  Mix thoroughly.  Pour into a buttered baking dish, and bake at 375 for 20-25 minutes, or until bubbly.  Serve with pita bread, bagel chips, crackers, or pretty much anything “dippable.”

It’s awesome.  Don’t count on there being any leftovers.

What’s Cookin’ Wednesday: Spicy Spaghetti Squash

whatscookinwednesdayAutumn is spaghetti squash season!

Spaghetti squash is such an unusual vegetable – technically, of course, it’s a fruit, since the seeds are INSIDE – but it’s also a very tasty and versatile food to work with.  So much can be done with spaghetti squash!

Spicy Spaghetti Squash

Ingredients:

1 spaghetti squash

1/4 cup romano cheese

2 tbs. chopped sage

2 tsps. melted butter

Texas Pepper Jelly, any flavor

What to do:

Preheat your oven to 350.  Cut the squash in half and remove all of the seeds.  Do NOT butter the rind.  Place the squash halves cut side down in a baking dish with sides, and bake for about 45-50 minutes, or until the squash is soft.  Remove baking pan from oven, and while the squash is still hot, take a large salad fork and scrape the inside flesh form the squash rind; the flesh should be stringy and look like spaghetti.  Mix all of the other ingredients into the “spaghetti” and serve!

I usually reserve the Pepper Jelly, put several kinds out on the table, and let my family choose their own to mix in.

This is a really fast and simple recipe, and very good on those crisp fall nights.  It’s also almost impossible to find spaghetti squash any other time of year.  It’s a seasonal treat, so enjoy it!

Monday Munchies: Crockpot Jambalaya

Jambalaya is such a versatile thing; to be quite honest, you can add almost any kind of leftover you’ve got to this recipe and it will just get better and better.

The meat is also optional, although it’s not really “jambalaya” without it.  Jambalaya is almost a “chili,’ but not quite.

Ingredients:

8 ounces sausage, sausage links, or any other kind of meat your family likes – cooked and drained

1 cup chopped onion

1/2 cup chopped green pepper

1 minced garlic clove

1 15.5-ounce can kidney beans, drained

1 15.5-ounce can black-eyed peas, drained

1 14.5-ounch can diced tomatoes, drained

1 bottle Texas Chipotle Habanero Finishing Sauce

1 cup crushed tomatoes

3/4 cup water

3/4 teaspoon thyme

What to do:

Put everything in your crockpot, cover, set on “low,” send the kids off to school and go to work yourself.  When you get home that night, turn off the crockpot. Throw some cornbread in the oven.  When it’s done, call everybody in for supper.

IF there’s any left over, it’s even better the next day.
