Monday Munchies: Spicy Applesauce

Get out your crockpot; this is a really easy recipe!

Everybody loves applesauce, and homemade applesauce is even better.  Best of all, though, is applesauce with a kick of jalapeno or habanero!  Impress your entire family with some homemade spicy applesauce. It’s really very simple to make from scratch.

Ingredients:

Approximately ten large tart apples, peeled and cubed

1/2 cup sugar  (I use Splenda, and you can always add more sugar if your family likes it sweeter.)

1/2 cup water

1 teaspoon cinnamon

2-oz jar of Texas Apple Pepper Jelly – jalapeno or habanero, depending on how “hot” your family likes things.

What to do:

1.  Combine cubed apples, sugar, water, and cinnamon in a slow cooker; stir gently.  Cover and cook on low for about 7 hours or until apples are tender.

2.  Add pepper jelly and stir.

3.  Serve.  My family prefers their applesauce cold, so I usually put the applesauce in a covered container in the refrigerator overnight.  If your family likes warm applesauce, however, just put it in a bowl and let them dig right in!  The pepper jelly turns plain ordinary applesauce into a real treat!

A Feast of Fridays: Spicy Spirals

Craig Sharry | August 7, 2009

feastoffridaysIf you are looking for a party appetizer or simply a healthy snack, there’s nothing like Texas Pepper Jelly’s Spicy Spirals!

Spicy Spirals can be made well ahead of time, too, saving you a LOT of hassle when you’ve got PEOPLE coming over, or just when you want something the kids can help themselves to during those hot summer days.  I keep them in the refrigerator all the time!

Ingredients:

1 cup shredded Cheddar cheese

4 ounces of softened cream cheese (I use Neufchatel because we’re dieting)

1/2 cup diced green chiles

1/2 cup sliced green onions

1/2 cup chopped ripe olives

4 soft 8-inch flour tortillas (You can also use biscuit dough or dinner roll dough)

1 jar Texas Habanero Salsa

What to do:

In a medium-size bowl, combine the cream cheese, Cheddar cheese, chiles, onions, and olives.

Spread about 1/2 cup of the cheese mixture on each tortilla.  Roll up, and wrap each roll in plastic wrap.  Put in the refrigerator and chill for at least an hour – overnight works best for me.

Remove the plastic wrap and slice each roll into about six 3/4-inch pieces.  Serve with Texas Habanero Salsa for dipping.

For variety, you can use red bell peppers or whole chiles, or almost anything from your garden that your family likes.  Sometimes I add sausage.

Unless your children are very young, you can even stick a toothpick in each spiral to save having to wash more silverware!

You’ll discover that you can never make too many Spicy Spirals; they’ll disappear like magic, and your family – or your guests – will always ask for more!

What’s Cookin’ Wednesday: Orange Habanero Grilled Chicken

Craig Sharry | August 5, 2009

whatscookinwednesdaySummertime is grilling time, and this recipe for Orange Habanero Grilled Chicken is destined to become one of your family’s favorites!  It’s certainly one of my family’s favorites!

I mix the salsa the night before; it makes the grilling go faster!

Orange Habanero Grilled Chicken

Ingredients:

1 cup Texas Orange Habanero Pepper Jelly

1 cup fresh cilantro, coarsely chopped

1/2 cup sliced red onions

1/4 cup olive oil (no substitutions!)

1/4 cup red wine vinegar

1 teaspoon salt

1 pound boneless, skinless chicken breast halves (those frozen boneless chicken breasts you buy in a bag are great; just thaw them first)

What to do:

In a medium-size bowl, combine the Orange Habanero Pepper Jelly, cilantro, onion, oil, vinegar, and salt. Cover tightly and chill for at least two hours.  I usually do this part the night before and let it “blend” overnight.  In the morning, you’ll have a kind of salsa!

Grill the chicken, turning frequently, for 15 to 20 minutes or until chicken is done – no longer pink in the middle.

To serve, just put a chicken breast on each plate and top with the orange habanero salsa.

Put a platter of corn on the cob and a bowl of pineapple habanero potato salad on the table, and what else could you possibly need?

Monday Munchies: Breakfast Nachos

mondaymunchies

My family loves breakfast, and they especially love a breakfast that’s a bit on the “nontraditional” side.  Bacon and eggs are well and good, but this recipe for Breakfast Nachos is one of their all-time favorites!  It’s the Texas Habanero Salsa that makes it so good!

Ingredients:

1 3/4 cups refried beans

4 cups tortilla chips

4 eggs, scrambled

1 1/2 cups shredded cheese, whatever your family likes best.  I usually use cheddar, or that taco cheese.  My sister uses Monterey Jack.

1/4 cup sliced jalapeno peppers

1 cup cooked, crumbled sauge or bacon – or both!  Ham works, too.

Sour cream

1 jar Texas habanero salsa habsalsasm

What to do:

Spread the refried beans over the bottom of a large pan.  Arrange the chips over the beans.  Arrange the scrambled eggs, cheese, and jalapeno peppers over this.

Broil for about 2 minutes, or until the cheese is melted.  Watch it carefully!

Top with salsa, sour cream, breakfast meat (optional) and anything else your family likes!  I use diced onions and guacamole, and you can use anything else your kids want!

Dig in.  There won’t be any leftovers.

A Feast of Fridays: Cool, Spicy Green Salads

Craig Sharry | July 31, 2009

feastoffridaysIt’s been really hot and humid here lately.  At the end of these long hot summer days, the last thing we want for supper is something that requires the heating of the oven.

We’ve been having all kinds of green salads for supper, and they suit us just fine!

This time of year, our selections of fresh greens are fabulous; the Farmer’s Markets are going strong, and we can put together a lovely big salad for not much money at all.

And what do we “dress” our hot summer night salads with?

We use our favorite Texas Pepper Jellies instead of salad dressing!  Seriously, it’s DELICIOUS!

My husband put Peach Habanero on his salad, and my son swirled some Pineapple over his.  I keep the pepper jellies in the refrigerator, and the cold hotness was soooo good on those fresh greens!

Really, it’s all a person needs for supper in this weather.

Sometimes it ‘s the simplest things that are the best.

Monday Munchies: Pep Up That Fruit Punch!

Craig Sharry | June 15, 2009
No comments

mondaymunchiesOnce again, sometimes the best ideas are the simplest ones!

Are you kids addicted to fruit punch in the summer?  Are YOU?  Well, isn’t it annoying when the ice cubes dilute your drink? And wouldn’t you like to put a little grown-up ZING in your punch?

You can do that with alcohol, of course, but we won’t go there.  Instead, why don’t you fill an ice cube tray with your favorite Texas Pepper Jelly and drop THOSE cubes in your punch instead of plain water cubes?  When the pepper jelly cubes melt, they’ll just add more ZING to your punch, instead of watering it down.

Get up right now and go do it.  You know you’ll be glad you did in a few hours when you can cool down your fruit punch with something as delicious and spicy as Texas Pepper Jelly Ice Cubes!

A Feast of Fridays: Zingy Apple Tea

Craig Sharry | June 12, 2009

feastoffridaysAre you in the mood for some iced tea that will really wake up your taste buds?  Try our Zingy Apple Tea!  It’s awesome.

Ingredients:

3 bags cinnamon herbal tea

3 cups boiling water (be careful!)

Several cinnamon sticks

6 whole cloves, or 3 tsp. ground cloves, or to taste

1 1/2 cups unsweetened apple juice

1 5-oz jar Texas Apple Pepper Jelly

What to do:

In a medium saucepan, combine apple juice, pepper jelly, cloves, and one of the cinnamon sticks, and bring to a boil over high heat.  then reduce the heat to low and simmer for ten more minutes.

While that mixture is immering, bring the water to a boil and then remove from heat and drop in the tea bags.  Allow to steep for about 7 minutes.  Remove and discard the tea bags.

Strain the cloves and cinnamon stick from the first mixture, and stir both mixtures together.  We like it best cold, but lots of people like this tea hot, too.  Use the extra cinnamon sticks for stirring.

Drink up!

What’s Cookin’ Wednesday: Pepper Jelly Glazed Ham

Craig Sharry | June 3, 2009

whatscookinwednesdaySometimes, it’s the simplest things that turn out to be the best of all!  We all glaze and bake a ham at least once a year, and why not glaze it with Texas Pepper Jelly?  What a fantastic difference!

You don’t even have anything to mix together; you can use the pepper jelly right out of the jar.

The only difficult thing about Pepper Jelly Glazed Ham is deciding which flavor of pepper jelly to use!  So far, my family’s favorites are Pineapple Habanero and Mandarin Orange Habanero.
