Texas Pepper Jelly: News Flash!

What’s Cookin’ Wednesday: Berry Medley Cheese Log

Cheese balls of all kinds and shapes are always popular at a party or get-together of any kind, and this Berry Medley Cheese Log is the best I’ve ever tasted!

Ingredients:

5 ounces of blue cheese, room temperature

2 ounces of shredded Gouda cheese

8 ounces of cream cheese, softened

10 ounces of sharp processed cheese food

1 Tbs. of Feta cheese

1 tsp. garlic salt

1/4 cup finely chopped onion

One 1.5-ounce jar of Berry Medley Pepper Jelly

1/2 cup chopped pecans

Directions:

In a large bowl, combine all of the cheeses, the garlic salt, onion, and the Berry Medley Pepper Jelly.  Mix well.  Cover bowl tightly with Saran Wrap and put it in the refrigerator for a few hours, or overnight.

When mixture is firm, shape it, with your well-washed hands, into a log.  Roll the log in the chopped nuts.

Put the cheese log on a pretty tray, and surround it with assorted crackers. 

Put the tray out for your guests and stand back.  You might get trampled in the mad rush that will surely follow!

(Any of the Texas Pepper jelly flavors will work with this recipe; I just like the Berry Medley mixed with the various cheeses, best.)

(You can, of course, shape this into a ball instead of a log, but I think it’s easier to scoop it up with crackers if it’s shaped like a log.)

Messermeister Cheese/Tomato Knife

This is the Messermeister cheese/tomato knife. It comes in three colors: black, red, and blue.  I like the red knife best.  There is something in my head that thinks a red knife will cut a red tomato better.  I know, I know.  🙂

We also use this knife to slice hard cheese.  It’s razor-sharp, lightweight, and makes it easy as can be to get a nice smooth slice of even the hardest cheese.

I am extremely particular about my kitchen knives; they must be RAZOR-SHARP, and lightweight, and strong, strong, strong.  Messermeister knives fill my bill perfectly.

Messermeister cutlery isn’t expensive, either.  The cheese/tomato knife is only $21.99, and worth every penny.  You can’t buy a knife this good in a store.  Not for that price.

My husband almost always has a brick of hard cheese going, and he’s crazy about the Messermeister cheese/tomato knife.

Messermeister knives go right in the dishwasher, too.  Just be careful loading and unloading it, because these knives are SHARP!!!  I love them.

Something Awesome is On Its Way!

Texas Pepper jelly will be introducing something new and awesome soon, but I can’t tell you what it is, yet.  Can’t even give you any hints.  Nope, not a one.

That being said, I’ll just tell you what we had for supper tonight.

Boneless country-style pork ribs were on sale this week, so I bought three pounds, cut them apart, and threw them in the crockpot with a sliced onion and some BBQ sauce.  My family is divided on the subject of BBQ sauce, but I was the cook so I used the kind I like.

Those ribs cooked all day, and the house still smells great.  I wish we could find a BBQ sauce that everyone in the house liked, though.  It would make things a lot easier, for we are all crazy for BBQ and I make it at least twice a week, using one kind of meat or another.  I put several different kinds of sauce on the table.

I put BBQ sauce in my baked beans, too.  BBQ sauce and Texas Tropical Habanero pepper jelly.  And is there anything that makes a meatloaf taste as good as when you put some BBQ sauce in it?  And ON it?

Yes, Texas Pepper Jelly will be introducing a new product very soon now.  No, I won’t tell you what it is.

Not directly, anyway.  🙂

What’s Cookin’ Wednesday: Pineapple Jello Salad

  • Sometimes, it takes an ingredient that most people would consider “odd” to turn a dish from something ordinary into something FANTASTIC!

Try this Pineapple Jello Salad at your next get-together.  It’s not your grandmothers Jello Salad, that’s for sure!

You’ll need:

One large package of lime Jello-O, or two small packages

2 1/2 cups VERY hot water

1 12-oz can of crushed pineapple, mostly drained

1/4 cup Pineapple Habanero Texas Pepper Jelly

1 cup Miracle Whip or mayonnaise  ( I like it with Miracle Whip better, but you might be different!)

2 cups cottage cheese (small or large curd, which you like best.  I like the small curd better.)

Dissolve the lime Jell-O in the hot water.   Chill until PARTLY set.

Mix the Jello and all the other ingredients in a large bowl.  Pour into a mold or casserole dish and chill until firm.

“Frost” with Cool-Whip or whipped cream, if desired.  Serve proudly.  Don’t count on any leftovers.

Heat Up Valentine’s Day with Texas Pepper Jelly

Valentine’s Day is Saturday.  That’s THIS COMING SATURDAY, in case any of you have lost track of time and still don’t have a gift for your beloved.

Why give an ordinary gift, though, when you can give something different, something EXTRAordinary, something that’s genuinely HOT?!

Might I suggest:  Fix a romantic candlelight dinner for two, with soft music and flowers in a vase, and a small gift-wrapped sparkly something by his/her plate?  For the main course, how about chicken breasts a la Pineapple Habanero pepper jelly?  Marinate the chicken in the pepper jelly, and however you choose to prepare it, brush more pepper jelly over it several times as it cooks.  If you use your crockpost, just let the chicken marinate AS it cooks, smothered in pepper jelly.

The warm feeling that you both will feel as you enjoy your meal together will be even warmer than you planned.  Pineapple Habanero pepper jelly is some pretty hot stuff, and hot stuff can lead to hot stuff.  🙂

What’s Cookin’ Wednesday: Pineapple Habanero Scallop Stir Fry

Looking back over all the What’s Cookin’ Wednesday posts, I realize that I use a lot of Pineapple Habanero pepper jelly!  What can I say?  It’s our favorite!!!!!!

And, my husband loves stir-fry, so we have that a lot, too.

Last night, I combined these two culinary beloveds, and it was such a hit you wouldn’t BELIEVE!  Oh, I know, I made pretty much this same thing last month, but last night, I didn’t use the usual chicken, pork, or beef that I usually use with stir-fry.

I used scallops.

And, that scallop stir-fry was the best yet.  These suppers are so simple, so inexpensive, and yet so absolutely delicious, it’s as though they cost a fortune!

The “recipe” is a cinch:  Dump a bag of frozen stir-fry vegetables into a large frying pan or wok, in which a few drops of olive oil have been heating.  When they start to sizzle, dump in about a cup of scallops – I buy them frozen, so they’re easy to “pour.”  They cook through in just a few minutes, so once the whole pan is sizzling, put a cup of brown rice and two cups of water in a big bowl, cover with a sheet of waxed paper, and  put it in the microwave on “high” for six minutes.  After the timer rings, leave the bowl, covered, in there until it’s time to serve.  The rice will keep expanding while it’s waiting, just like Steve Spangler’s Insta-Snow.

When the stir-fry is a minute or two away from being done, dump in half a jar of Pineapple Habanero pepper jelly and stir until it’s all hot.  Remove the bowl of rice from the microwave; give everyone a big spoonful of rice in their plate and pour the stir-fry over it.  Add a tossed green salad, and you’ve got a nice, nutritious, delicious meal for your family.

My son puts the Pineapple Habanero pepper jelly on his salad, too.
