Winter Grilling with Texas Pepper Jelly!

Summer’s over, so we all need to cover and put away our grills.

Hahaha, just kidding. Winter grilling is some of the best grilling EVER!

However, just like summer grilling, winter grilling requires some special care. The first thing you need to do is shovel any snow off your deck and away from the grill. You don’t want to take any chances of slipping on ice or snow and falling into the grill!

Next, you need to make sure you’re dressed appropriately. In summer, we’re advised not to wear skimpy clothing in case of burns. In winter, we need to dress warmly, but it’s important that we not have any dangling scarves, etc, that might touch the flame and catch fire.

If you haven’t used the grill for a few weeks, check it carefully before you heat it up to make sure you won’t be cooking any spiders, nests, egg sacks, or cocoons. Gross, right? So check. (This is also a good rule for before that first springtime cookout!)

Another tip, which is good year-round but especially appropriate for winter grilling, is that if you’re going to fire up that grill in bad weather, you might as well use it for as much of your meal as possible. Throw in the potatoes, corn, and even the bread, as well as the meat. Just be sure you know the cooking times for everything so you can coordinate!

If it’s really cold outside, keep the grill’s lid closed for most of the cooking time. Opening it up too often when the thermometer is cold will delay your cooking time.

Important point: NEVER use your grill indoors, and that includes your garage. If the weather is so bad that you can’t stand outdoors and grill, give it up and use your kitchen stove. This applies to both gas and charcoal grills. Do not take a chance. Be smart about your grilling.

Candy Pie – But Not What You Think!

Guess what we had for dinner last night – Candy Pie! When I told the kids we were having Candy Pie, their eyes got big, old as they are, and my son whispered, “Awesome!”

He said it again after dinner. So will your kids.

Ingredients:

1 deep-dish pie crust (make sure you have enough for a really deep pie! Actually, I use a cake pan for mine.)
4 large tomatoes, peeled & sliced
1/2 cup chopped fresh basil
3 onions, thinly sliced
1/2 pound bacon, cooked, drained, and chopped (mmm, bacon!)
1/2 teaspoon garlic powder
1 teaspoon oregano
2 cups shredded Cheddar cheese (I used a mixture of whatever cheeses are left over in the fridge.)
1/3 cup Texas Rib Candy

What to do:

Preheat your oven to 375.

In alternating layers, start filling your pastry shell with tomatoes, basil, scallions, bacon, garlic powder, and oregano. Set aside.

In a medium bowl, mix the cheese and Rib Candy, Spread this mixture over the top of the pie and cover with aluminum foil – loosely.

Bake in your preheated 375 oven for a half hour, then remove the foil and bake an additional half hour.

Candy Pie is delicious warm or cold. When it’s cold – a few hours after dinner, for example, my kids scooped it up with all kinds of crackers. My son put a little sour cream on his and pronounced it even more delicious. We all poured a little extra Rib Candy over our individual pieces, more because we all just like the stuff rather than for any logical purpose.

Candy Pie. It’s not what you think – it’s even better.

Apple Cinnamon Pumpkin Pie: DELICIOUS!

Oh, holy cow, y’all, this pie is so good I can hardly stop eating it long enough to tell you how to make it! I can’t WAIT to serve this recipe at Thanksgiving when my family is all here!

Ingredients:

2 cups pumpkin puree, canned or fresh
3/4 cup milk – I use skim
1 cup light cream
1/2 cup brown sugar
1/2 cups white sugar – I use Splenda
1 1/2 teaspoons ground cinnamon
1/4 salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 cup Texas Apple Cinnamon Rib Candy
1 tablespoon flour
3 beaten eggs
1 large unbaked pie crust (Or make your own.)

What to do:

Preheat your oven to 450. In a large bowl, mix together – and thorough – everything in the above list except the pie crust. Make sure all the ingredients are blended well.

Pour the mixture into the pie shell and bake for 10 minutes at 450. Reduce the temperature to 350 and bake for 45-60 minutes until the filling has “set” and the crust is nicely browned. After 45 minutes, keep checking every five minutes or so. The toothpick test is usually pretty accurate for pie filling.

Let the pie cool, dollop it with whipped cream, and stand back. The touch of zingy spice from the Rib Candy, and the hint of apple in it, too, will turn your pumpkin pie from ordinary into spectacular.

My kids like it when I slice Granny Smith apples very thin and make a design on top of the “set” pie. That’s healthy, but please don’t tell them that.

Did I mention that this baking pie will make your whole house smell absolutely fantastic?

Spicy Deep-Fried Dill Pickles

whatscookinwednesday I met some friends for lunch last weekend, and they ordered a very interesting appetizer: fried dill pickles.

I was skeptical at first, but I’m also adventurous, so I took a bite. Not bad. Kind of bland, but not bad. The dipping sauce – simple ranch dressing – helped.

But I couldn’t stop thinking about those fried pickles. It seemed to me that a dash of something spicy would be the saving grace of them. So here you go: SPICY Deep-Fried Dill Pickles!

Ingredients:

2 cups canola oil
12 large dill pickles, sliced and thoroughly drained
1 cup seasoned bread crumbs
1/2 teaspoon garlic powder
1 teaspoon Texas Rib Candy
1 teaspoon Pineapple Habanero pepper jelly
2 beaten eggs
assorted jars of Texas Pepper Jelly

What to do:

Heat the canola oil in a large heavy skillet or saucepan. In a medium bowl, stir together everything else except the eggs, rib candy, pineapple habanero, and the assorted jars of pepper jelly. In another medium bowl, beat together the eggs, the rib candy, and the pineapple habanero. Mix thoroughly.

Dip the THOROUGHLY drained/patted dry pickle slices into the beaten egg mixture, and then into the bread crumb mixture. Fry the pickles in the hot oil until golden brown on both sides (You’ll have to turn them.) Transfer them to a paper towel-covered plate, and serve hot with the assorted pepper jellies. You might set out the bottle of Texas Rib Candy too, if there’s any left.

The touch of habanero makes these spicy deep-fried dill pickles an awesomely perfect snack or appetizer. I certainly never dreamed that fried pickles would become one of my favorites!

Spicy Apple Habanero Beef Stew

crockpotpepperjelly It’s almost October, and people are starting to remember all those hot and hearty soups and stews from last winter! There’s nothing like a thick, delicious crockpot stew to make an autumn supper perfect. Texas Pepper Jelly has a fabulous one, and we know your family will love it!

Ingredients:

2 pounds beef stew meat (a cheap cut will do fine – crockpot cooking guarantees tender meat!)
8 carrots, sliced thin
6 medium potatoes, unpeeled, sliced thin
3 Granny Smith apples, unpeeled, sliced thin
dash of thyme
one large onion, chopped fine
1 cup apple cider
1 cup Apple Habanero pepper jelly
2 tablespoons cornstarch
1/4 cup water

What to do:

Put everything except the cornstarch in your crockpot and stir. Put the lid back on, set the crockpot to “low,” and go on to work. When you get back home in approximately 8 hours, check the contents to make sure the meat is done. If it isn’t absolutely tender, replace the lid and cook for another two hours. When the meat is done, everything else should be done, too. Turn the crockpot to “high” and add the cornstarch and water; stir until thickened.

I always serve cornbread with crockpot stews, and the combination makes an awesome cool-weather supper.

If you have any stew left over – which is doubtful – it’s even better warmed up the next day.

My Kids Found Where I Hid My Pepper Jelly!

pepper jelly & bread I had ONE jar of Texas Pepper Jelly left – Strawberry Habanero, one of my favorites. The only reason I still had it was because I HID IT from my husband and kids. Yes, I hid it. That’s the only way I can keep the good stuff from being devoured before its time. Oh hush – you do it, too.

My Strawberry Habanero was only partly used up, too. I save it to stir into my hot tea in the morning – it’s awesomely good!

However, the picture you see above shows my Strawberry Habanero as it was, not as it is. My kids moved the jar of olives aside and found it, and the little beasts ate every last bite of it on hot buttered toast as a before-bed snack.

Did I call them beasts? I don’t really mean that. They’re my precious babies. My precious babies who found and stole my last jar of Texas Pepper Jelly and ate it ALL. I mean, what am I supposed to stir into my hot tea now? The little beasts. I mean, precious little children.

Wahhhhh. . . . .

Seriously. The only thing better than Strawberry Habanero would have to be Pineapple Habanero. Or maybe Raspberry. Or Peach. Or Texas Medley. That new Apricot is delicious, too. I make all my apple pies with Apple Habanero now, plus, Apple is awesome stirred in hot cider. To be entirely truthful, we have loved every flavor of Texas Pepper Jelly we’ve ever tried, and I never tire of thinking up new and different ways to use pepper jelly in my recipes.

I mean, I WOULD, if I had any now. Little beasts.

Strawberry Habanero Popcorn Balls?? DELICIOUS!

Strawberries In most areas of the country, strawberry season has been over for a while by now. However, there are also bags of strawberries in freezer bags all over the nation, too! Plus, fresh strawberries are still available in grocery stores, and it is there that I scored a few pounds of strawberries and decided to experiment with some of them.

In science labs, of course, some experiments work and some don’t, and some don’t turn out exactly as we thought they would, but we end up with a success anyway.

I had some Strawberry Habanero pepper jelly left, so I mixed it with some diced fresh strawberries and. . . . . .

. . . . mixed it with some freshly popped popcorn. Minus the butter and salt, of course.

I added a cup of corn syrup, buttered my hands (more than once, I might add!) and VOILA – we had Spicy Strawberry Habanero Popcorn StrawberryHabaneroPopcornBallBalls.

General consensus was that they were absolutely delicious. I do know that there aren’t any left, and I just made them three hours ago.

Syrup? Not With Texas Pepper Jelly on the Table!

It’s been a long, difficult week, and the weekend couldn’t have come soon enough! We deserve a treat, so tomorrow morning, I’m making pancakes.

Not just any pancakes, though. We don’t use syrup any more, even on pancakes. Not even on waffles. Once we tried some Texas Pepper Jelly on our pancakes, syrup seems so dull. Yes, we’ve become such Texas Pepper Jelly fanatics here, that we’re even eating it for breakfast now!

And let me tell you:  those pancakes are DELICIOUS!  No syrup necessary with Texas Pepper Jelly on your pancakes. Nope. Syrup, your days here are not just numbered – they’re timed out. Over. Done. Zip. Zilch.

Now, plan on making pancakes tomorrow morning, and open a jar of Texas Pepper Jelly to put on them.  Mmmmm, it’s AWESOME.

Any flavor is good – and if you’ve got some fresh fruit to mix with the pepper jelly, so much the better.

This is the weekend of Sept. 11, you know. Reminders of the horror will be all around us. We here at Texas Pepper Jelly want to add our wishes that nothing like this will ever happen here again.
