Monday is the Glorious Fourth, and we here at Texas Pepper Jelly hope you’ve got plenty of pepper jelly and grilling sauces for your outdoor barbecue purposes!

Since we all have our individual flavor preferences, our mixed case of Texas Pepper Jelly just might be your best bet, if pleasing everyone is your goal. Unlike most companies, our mixed cases are mixed according to YOUR preferences, not our personal convenience. In other words, you tell us which flavors you want in your mixed case; we don’t tell you.

Choose one of each. Choose a full case of two flavors. Choose one flavor and the rest of another flavor. It’s your call – your preferences. We’ll send you whatever you ask us to send you.

And then, when you have your holiday cooking – or an everyday cookout, for that matter – you’ll be able to offer your family and friends whichever flavor they love best.

Deviled Eggs – Texas Style!

spicy devilled eggs What’s a picnic or outdoor barbecue without deviled eggs? There’s something about a tray of lovely gold-and-white deviled eggs, nice and cold, that sums up “summer” with a glance.

This recipe for Texas Style Deviled Eggs will be the hit of your outdoor meal – after the meat, of course. (Especially if you are using Texas Rib Candy as you grill!)

Ingredients:

12 boiled & peeled eggs
1/4 cup mayonnaise or Miracle Whip (My family prefers MW)
1/4 cup Texas Pepper Jelly – vary the flavors!
2 tbs. Dijon mustard (yellow mustard will work, too.)
Dash salt
Dash pepper
Dash onion powder
Dash garlic powder
1/4 cup diced green onion

What to do:

Slice each boiled egg in half, put all the yolks in a bowl and arrange the whites on a tray.

With a whisk, stir the yolks until you’ve got what looks like powder in your bowl. Add all the spices and condiments, and begin to add your sauces a little at a time, until you’ve got a good “filling” consistency. You might need to add a little more pepper jelly, or you might not need the full 1/4 cup. It varies.

With a spoon, begin to fill the egg whites. If you’ve got an icing bag, that makes a nice swirly effect.

When all the eggs are filled, sprinkle the diced green onions over the tops. Cover, and place in the refrigerator until it’s dinner time.

Stand back.

P.S. Sometimes, I add a little pickle juice. Any kind of pickle juice works, and this adds a little more jolt to your eggs.

Creamy Rib Candy Vinaigrette

Texas Pepper Jelly Icon, spicy, barbecue sauce, grilling, cookout

On these hot summer days, there’s nothing that hits the spot like a cold salad; and no cold salad in the world has EVER sounded as good as this one from Texas Pepper Jelly CEO Craig Sharry! Here’s his advice to y’all:

I was looking through the fridge today and decided to cook something cool and refreshing for dinner tonight. I decided to make a grilled turkey pasta salad with a Creamy Rib Candy Vinaigrette.

Here’s the recipe for the vinaigrette:

1/2 cup Mayo, I use the kind with olive oil
1/4 cup Apple Habanero Rib Candy
3 Tablespoons lemon juice
1tbs Dried Basil
1tbs dried rosemary
1.5 tbs dried oregano
Sea salt and cracked pepper to taste
2 tbs dijon mustard

Whisk thoroughly to incorporate.

In the salad I added crumbled feta and blue cheese, diced red bell pepper and diced cucumber.

I grilled 2 turkey thighs with salt and pepper and glazed them with Rib Candy.

Put them in the fridge to chill after cooking. Pull the meat from the bone, slice and fold into the salad.

Enjoy!

We’re having this for dinner tomorrow night. Can’t WAIT.

Apple Habanero Barbecue Sauce: Awesome!

Texas Pepper Jelly Icon, spicy, barbecue sauce, grilling, cookout Your cookout is only as good as your grilling sauces, you know, and that includes your barbecue sauce.

Texas Pepper Jelly’s Apple Habanero Barbecue Sauce will guarantee that your cookout will be a rousing success! It’s easy to make, too!

Ingredients:

1 cup applesauce
1 5-oz jar of Texas Pepper Jelly’s Apple Habanero
1/2 cup ketchup
2 cups brown sugar
6 tablespoons lemon juice (use a real lemon, not that plastic lemon)
1/2 teaspoon salt – if you must
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon ground cinnamon

What to do:

In a medium saucepan over medium heat, mix together all of the above ingredients and bring the mixture to a boil. Remove from the stove and let it cool completely. Use it to baste any kind of meat, or use it as a dipping sauce at the table.

Any way you use it, it’s absolutely DELICIOUS!

TPJ grillerguy If there was ever an “official” day to grill out, it would be Father’s Day, wouldn’t it!

This weekend, families all over the nation will be outdoors, watching Dad grill, and devouring the results. Whether your dad’s specialty is simply burgers and dogs, or whether your dad ventures into the area of ribs, briskets, chicken, and other delicious meats, there’s something about food cooked on a grill, outdoors, that makes us drool just to think about it.

People have bigger appetites when they eat outdoors, and foods cooked on an outdoor grill have a fragrance that nothing else can compete with. If you don’t believe it, just think for a minute and remember how the very air smells when your neighbors are grilling out, and how “other people’s meals” can inspire you to fire up your own grill.

This Father’s Day, we here at Texas Pepper Jelly hope you and your family have a wonderful, safe, yummy day, with all the people you love best. If you are fortunate enough to still have your father, and if you are even MORE fortunate to have a father who loves to cook outdoors, we hope you will count your blessings, and perhaps even share him with friends who have lost their fathers.

As for all of you fathers out there, who plan to grill out this weekend, well, all we can say is, GOOD MOVE! And we know your families appreciate it, too.

Grilling Chicken? You Need Texas Bird Bath!

This excerpt from this month’s Texas Pepper Jelly Newsletter contains some of the best chicken-cookin’ advice I’ve ever seen. I’d follow it if I were you!

Chicken is one of the most popular foods to grill, especially because it’s so versatile and requires very little preparation. However, to successfully grill chicken without it becoming a char-grilled mess, there is a little bit of skill or know-how involved:

* Start with a clean grate; otherwise, you will have a lot of flare-ups. Then lightly coat the grate with cooking spray or oil to prevent chicken from sticking during the grilling process.

* Speaking of flare-ups – they are inevitable, so be prepared. Excess grease from fat and skin dripping onto the coals will cause flare-ups, so when that happens remove the chicken until the flames subside before putting the chicken back down. If the flare-ups continue, move the chicken to a cooler part of the grill.

* Larger pieces of chicken take longer to cook than smaller pieces, so you can either start cooking the bigger pieces in advance, or set up your grill so that one part is hotter than the other. If doing the latter, cook the larger pieces near the higher temps, such as the breasts. Place the thighs a little further away, followed by the legs. Finally, the wings will be grilled over the coolest part of the grill. This will help everything to cook evenly and pretty much on time.

* Using tongs (not a fork), turn the chicken frequently – about every five minutes – to prevent charring and blistering, while insuring doneness.

* To further prevent charring, apply barbecue and other savory sauces such as the Texas Bird Bath during the last 20 minutes of grilling.

* Chicken is done when it reaches an internal temperature of 165 degrees. Different parts take different amounts of time to cook as follows:

* wings – approximately 10 minutes per side
* boneless breasts – approximately 5 to 6 minutes per side
* bone-in chicken – approximately 25-30 minutes, turning frequently
* chicken quarters – approximately 35-45 minutes, turning frequently
* chicken halves – approximately 45-60 minutes, turning frequently
* whole chicken – approximately 30-40 minutes on each side with indirect heat in a covered grill

Special note: marinating or brining chicken in advance helps to keep it from drying out during the grilling process.

Grilled Texas Hot Dogs

whatscookinwednesday Hot dogs are probably the simplest of all meats to grill out – after all, all we have to do is slit ’em down the middle and throw them on the grill for a few minutes, right?

That’s right!

What makes Texas hot dogs so great is what you add to them.

My advice to you, if you plan to grill hot dogs any time soon, is to open your refrigerator door, remove all the vegetables, pickles, condiments, fruits, cheese. . . pretty much everything but the buttermilk. . . cut them up small, pour in a 2-oz jar of pretty any Texas Pepper Jelly or Rib Candy, and stir-fry them in a pan on your grill. When the hot dogs are done, put ’em on the buns and spoon the mixture over them, plus a slice of cheese. Any kind of cheese. Maybe, even, many kinds of cheese.

Experiment with hot dogs. Cover them with cole slaw. Make sloppy joes. Pour diced onions and pepper over them, and add some pepper jelly.

Grilling outdoors is an excellent way to get your kids to eat vegetables, too. There’s just something about hot dogs cooked outdoors on the grill that makes everybody hungry and eager to try new ways to serve and eat.

Texas Pepper Jelly Today was hot and humid – one of those late spring days made up of warm rain and stickiness. I didn’t want to turn on the stove or oven, yet we had to eat!

So, now I’m going to repeat what I’ve said so many times on this blog: the simplest things are often the best.

For supper tonight, we had a luscious fresh fruit salad, yogurt, and some leftover strawberry shortcake. Aren’t you jealous?

It wasn’t just any ordinary fruit salad, either.

It was made of fresh pineapple, strawberries, raspberries, blueberries, and cantelope, with Texas Pepper Jelly’s Pineapple Habanero stirred through it.

Go ahead and drool. You know you want to.
