Super Bowl Meatloaf: Stop Laughing & Have A Sandwich!

Texas pepper Jelly super bowl food Oh hush. You know you love a good meatloaf sandwich, and Texas Pepper Jelly’s Spicy SuperBowl Meatloaf is the best EVER.

Texas pepper jelly meatloaf, football foodThis recipe makes awesome meatloaf – fit for your family dinner table – but this weekend it will be easier to just slice it up and turn it into the kind of sandwich that will bring all the neighbors to your sofa.

Ingredients:

3 pounds hamburger
1 1/4 cup dry bread crumbs ( cracker crumbs work, too; that’s what I use)
1/4 cup chopped onion
1/4 cup chopped green pepper
3/4 cup nonfat dry milk
1/2 cup Texas Rib Candy
1/4 cup water
1/2 cup ketchup
4 large eggs
1 tablespoon garlic powder (not garlic salt!)
1 teaspoon black pepper
1/4 teaspoon salt (if you use cracker crumbs, omit the salt)

What to do:

Preheat your oven to 375.

In a large bowl, combine all but 2 tablespoons of the ketchup, and mix thoroughly – use your hands. Divide the mixture into two “loaves,” and place in ungreased baking pan. Don’t use a flat cookie-type pan; your pan must have sides. Cover the tops of both loaves with the remaining ketchup.

Bake for approximately an hour. When your timer goes off, check to make sure your loaves do NOT have pink centers.

Let the loaves stand for at least a half hour before slicing. In fact, if you make them the day before, they slice a lot better cold.

Most people do not need any condiments with these sandwiches, but since a few will, set out some ketchup, mustard, pickles, etc. Eat ’em up.

Super Bowl Deli Dip: Texas Rib Candy Makes It Extra Awesome!

Texas pepper Jelly super bowl food There’s nothing like a big bowl of awesome dip and all kinds of crackers, chips, and raw veggies, when you’re sitting on the couch with family and friends, enthusiastically watching a good football game, is there. . .

Well, here’s one of the best recipes for a great dip that you’ll ever find. It’s easy, too! And, it goes great with anything dip-able!

Get out your food processor, and get to choppin’!

Ingredients:

1/3 pound chopped turkey
1/3 pound chopped pepperoni
1/4 pound chopped ham
1/4 cup chopped provolone cheese
1/4 cup chopped cheddar cheese (Loco Cheese Dip makes it even better!)
1/2 cup chopped onion
1/2 cup Miracle Whip (mayonnaise works, too)
1/4 cup Texas Rib Candy
2 tablespoons Texas Pepper Jelly – any flavor – next time, use a different one!
1/4 cup chopped green pepper
2/3 cup chopped tomatoes

What to do:

In a large bowl, mix together everything except the tomatoes. Cover and let it “set” in the refrigerator overnight, or for at least an hour.

Stir in the tomatoes just before you serve it.

Serve with any kind of crackers, chips, or raw vegetables. Or all of those choices.

Don’t expect any leftovers, but if by chance you have a little dip left over, store it in the refrigerator. It’s even better the next day.

SuperBowl Food: Spicy Veggie Burgers

Texas pepper Jelly super bowl food I know what you’re going to say – “my family won’t eat a veggie burger; they want MEAT.”

And here’s what I’m going to say about that: “That’s because they haven’t tasted Texas Pepper Jelly’s Spicy Veggie Burgers yet!”

I’m not kidding; our Spicy Veggie Burgers are drop dead delicious, and your football fan family will be asking for them all year long.

Item: you’ll need a food processor for this recipe.

Ingredients:

4 cups cooked black beans, rinsed and very thoroughly drained (canned is fine)
1 large onion, sliced
1 large green pepper, seeded and sliced
3/4 cup sliced mushrooms (canned is fine)
2 Tbsp. garlic buds or garlic powder, or 3 cloves
3/4 cup mozzarella cheese, shredded
2 large eggs
1 TBSP ground cumin
1/4 cup Texas Rib Candy – any flavor – experiment!
1/2 cup dry bread crumbs or cracker crumbs (estimation)

1/2 cup uncooked brown rice
1 cup water

What to do:

The first thing to do is to put the water and brown rice in a medium-sized saucepan and bring them to a boil. Cover, and lower the heat to simmer. Simmer until the rice is tender and all the water has been absorbed; this should take a little over a half hour.

These burgers can be grilled outdoors or baked in your oven. Let the weather make this decision for you!

If you’re going to grill, preheat your grill to high. Put a lightly oiled piece of foil on your grill.

If you’re going to bake the burgers in your oven, preheat it to 375 and oil a baking sheet.

Mash the black beans in a LARGE bowl, and set the bowl aside.

Put the green pepper, onion, mushrooms, and garlic in your food processor and chop finely. Stir this mixture into the black bean mixture. Now put the brown rice and chese in the processor, and process until combined Stir this mixture into the black beans, also.

Mix together the eggs, cumin, and Rib Candy, and mix this into the black beans. Fold in the bread or cracker crumbs – you might need less or more, to make the patties firm.

Form the burgers; if you like them large, this recipe will make about six; if you prefer smaller burgers, this recipe will yield a few more.

Put the patties on the grill, on top of the foil, and grill until browned and hot all the way through. This should take about 7-9 minutes per side.

If you’re baking them in the oven, put the patties on the oiled baking sheet and bake about 10 minutes; then turn the patties over and give the other side about 6 minutes.

These times vary with different ovens and grills; use your judgment.

These burgers are so good, my family doesn’t even use tomatoes, pickles, lettuce, etc. However, it’s probably a good idea to have some condiments read. My son just puts more Rib Candy on his.

If you’ve got a crowd on your couch, watching the football game, you might need to double this recipe.

Don’t forget to buy a lot of buns!

SuperBowl Nachos!

When we’re watching the Super Bowl from home, it’s important to have awesome Superbowl Snacks. Stop laughing – you know it’s true!

So let’s start with Texas Pepper Jelly’s fantastically delicious SuperBowl Nachos.

Ingredients:

Bag of tortilla chips
1/2 cup taco sauce
1 jar of Loco Cheese Dip
1/2 cup shredded pepperoni

What to do:

You can always layer these ingredients in a big bowl, but when we’re sitting on the couch waving our arms and yelling at the TV screen, we’ve found it works best if we do it this way:

Cover a plate with tortilla chips, pour the taco sauce over the chips, pour the Loco Cheese Dip over the taco sauce, and sprinkle the shredded pepperoni over it all.

My husband and son like to use giant Fritos to scoop it all up, but that’s a personal decision. You may use whatever you wish, and scoop it up however best suits you.

Note: I like the Fritos-as-scoop, too. My daughter and her friends use a fork, but they just have better manners, I guess.

P.S. Texas Pepper Jelly’s Loco Cheese Dip is good all by itself, too. In fact, it’s fantastic.

P.P.S. This recipe is great hot or cold. It’s also good for the crockpot. It’s equally good right out of the refrigerator. Your choice.
