A Feast of Fridays: Pineapple Habanero Pizza

feastoffridays Oh, this pizza is fantastic! It kicks ordinary Hawaiian pizza up more than one notch of deliciousness!!!

Ingredients:

Pizza crust
1 5oz jar of Texas Pineapple Habanero Pepper Jelly
1 cup diced pineapple, fresh or canned (drain it thoroughly!!!!)
1 cup diced ham
1 cup mozzarella cheese (any kind of cheese works here, so use whatever your family likes best)
Dash of oregano

What to do:

Spread the crust over the greased pizza pan. Spread the entire jar of Pineapple Habanero pepper jelly over the crust, and cover with the diced pineapple and ham.

Bake in a 425 oven, on the bottom rack, for about 15 minutes or until the crust is browned. Remove pizza from oven and sprinkle the cheese over it. Return to oven and bake at 350 until the cheese is melted.

Remove from oven, let pizza “sit” for about five minutes, then slice and step back.

You might want to make two of these, so the other one can bake while your family is diving into the first one.

What’s Cookin’ Wednesday: Spicy Stuffed Bell Peppers

whatscookinwednesday Bell peppers are finally inexpensive this time of year, so buy a bag of them – all colors – and serve your family a real treat this week.

Ingredients:

8 bell peppers, any kind
2 large onions, diced
1/2 pound cooked hamburger, shredded & well drained
1/2 pound cooked sausage, shredded & well drained
Leftover vegetables, if desired
1 cup cooked rice, any kind
1 cup Texas Pepper Jelly, any flavor stuffedpeppers

What to do:

cut the tops off the peppers and remove the seeds and membranes. Leave the stems on the caps. Arrange on a large cookie pan.

In a large bowl, mix together all the other ingredients. Stuff the peppers and replace caps.

Bake at 350 for about twenty minutes. Meat is already cooked, so you’re really just heating thoroughly and blending the flavors.

Put several jars of pepper jelly on the table so your family or guests can add more if they wish. My kids always do.

I usually serve this with a tossed salad and baked potato.

Dig in!

Monday Munchies: Spicy Black-Eyed Peas

mondaymunchies Black-eyed peas aren’t just for New Year dinner, you know!

Ingredients:

one 16-oz can black-eyed peas, rinsed and drained

1 large onion, diced

1 cup Texas Pepper Jelly, flavor of your choice

What to do:

Mix everything together in a large bowl, and pour into a casserole dish. Bake in a 325 oven for an hour, or until the onions are tender.

Spicy Black-eyed Peas are extra-delicious when served with corn bread!

What’s Cookin’ Wednesday: Breakfast!

whatscookinwednesday My family loves breakfast, and my family loves Texas Pepper Jelly products. What better combination could I give them than to put some Texas Pepper Jelly on the table so they could add it to the breakfast foods of their choice?

I really wasn’t surprised to see what all of them did.

They put it in their oatmeal.

My kids and my husband have always loved to swirl jam through their hot cereal, and according to them – and they’re very reliable sources when it comes to food – pepper jelly is even better in oatmeal than is regular sweet jam.

I was busy spreading pepper jelly on my toast, so I didn’t really hear the rest of the conversation.

Monday Munchies: Apple Pie

DSCF5120 This is the spicy apple pie I made last night. It was really pretty; I’d cut a pine tree into the top crust. It was a work of art, this pie. I made the mistake of leaving it on top of the stove to cool while I went downstairs to fold towels.

When I came back upstairs, my husband and son had forks in their hands and a really guilty look on their faces. And my beautiful pie was no longer a work of art.

However, my quality control team assured me that spicy apple pie was a big hit.

Here’s how to make it.

Ingredients:

Three Granny Smith apples

Three Gala apples

Three Red Delicious apples

3/4 cup Splenda

2 tablespoons cinnamon

1 tablespoon fresh lemon juice

1/2 cup Texas Apple Jalepeno pepper jelly

Dots of butter (not margarine)

double pie crust

What to do:

Put pie crust in pan. Peel apples, and cut into think slices. Mix the apple varieties together and put it all in the pie pan. Over the top of the apples, pour the Splenda, cinnamon, Texas Apple Jalapeno pepper jelly, and lemon juice. Do not stir. Dot the apples with butter, and cover with the top crust. Cut a pretty picture into the top crust; you’ll get to look at it for a few minutes, anyway.

Bake at 425 degrees for twenty minutes; lower oven temperature to 350 degrees and bake for another half hour until crust is browned and apples are tender. Take a picture of your pie before your family finds it and dives into it.

Your entire house will smell divine. Now, if you’ll excuse me, I think I’ll go have a slice, myself.

What’s Cookin’ Wednesday: Spicy Tuna Salad

whatscookinwednesday Spicy Tuna Salad is yet another delicious dish that’s super easy to make.

We’ve all used regular tuna salad in all sorts of way: in sandwiches, as party dips, to stuff peppers with. . . and many more. Texas Pepper Jelly’s Spicy Tuna Salad can be used in any way that regular tuna salad can be used. The only difference is that Spicy Tuna Salad is better and has a bit of a kick to it.

Ingredients:

2 cans tuna-in-water, well drained
1/4 cup finely diced onion
1/4 cup finely diced celery
1/5 cup Texas Pepper Jelly or Rib Candy, your choice of flavor

What to do:

Mix all of the above ingredients together in a medium-size bowl, and do with it what you please.

I packed Spicy Tuna Salad sandwiches in Tim’s lunch, and stuffed the rest in two small green peppers for me.

Super simple, super scrumptious, and super economical as well. Just be sure to drain that tuna well!

mondaymunchies It’s been a hectic weekend, and Sunday night we were all exhausted. Starving and exhausted.

So I set out all the Texas Pepper Jelly products, and while Tim tossed a big salad, I steamed some brown rice.

We all sat wearily around the table, mixed the pepper jelly or Rib Candy of our choice into our brown rice, chowed down on salad, and went to bed.

It was delicious. So, so often, the easiest things are also the best things.

There were no leftovers.
