Pineapple Habanero Muffins

A few weeks ago, Texas Pepper Jelly posted a recipe for Pineapple Habanero Upside Down Cake, which is really, really delicious. Today, we’re posting a similar recipe for individual Pineapple Habanero muffins.

the previously posted recipe was for homemade cake, and this recipe is for boxed mix cake, but as far as flavor goes, there’s really not much difference. Tonight’s boxed mix recipe is a lot easier, though! (Hey, sometimes, we just need something super fast and easy!)

Preheat oven to 350.

In a regular-size muffin tin, spray each individual cup with butter flavored oil, or coat each individual cup with a thick coating of butter. Over the butter, put a tablespoon of brown sugar.

Over the brown sugar, place a ring of pineapple, or a tablespoon of crushed pineapple, 1/2 teaspoon Pineapple Habanero Pepper Jelly, and in the middle of that, place a maraschino cherry. Do not discard the pineapple juice.

Open a box of yellow cake mix and dump contents in a mixing bowl. Add three eggs, 1/2 stick of butter, 1/4 cup milk, and the pineapple juice from the can of pineapple. Mix thoroughly.

Pour this batter into the muffin tin on top of the pineapple, pepper jelly, brown sugar, butter, and cherry. Bake in your 350 oven for 20 minutes, and remove from oven. Test with a toothpick, and if the toothpick comes out wet, put the pan back in the oven for another six minutes.

Depending on the size of your muffin tin, you might have batter and pineapple left over. If so, either get out another muffin tin or use a small casserole pan, coat with butter, and add the brown sugar, pineapple, pepper jelly, cherries, and batter. If you don’t have any batter left over, that’s fine, too.

These Pineapple Habanero muffins are great for breakfast, or for a dessert, or for a snack at any time of day or night.

Leftover Easter Eggs?

Texas Pepper Jelly has a question: what are you going to do with all those leftover Easter eggs? The real eggs – the ones you boiled and dipped in colors? If your family is anything like mine, there is no way you can eat through that bowl of leftover eggs. No way.

Don’t think these are the only leftover eggs in our house – these are what was left over after we used most of them in the following recipe. My husband asked for a few boiled eggs to be left for his breakfast. The kids and I ate up almost a dozen more, but so will you and your kids when you follow Texas Pepper Jelly’s advice.

Get that bowl of cold eggs out of the refrigerator. Peel them. Slice each egg in half, long-wise. Remove the yellow centers and put them in a mixing bowl. Place the sliced egg whites in a shallow baking dish.

Assuming you’ve got six eggs – that’s twelve half-eggs, in your dish, add the following:

To the yellow egg centers, add 1/2 cup Pineapple Habanero Pepper Jelly, 1/4 cup finely shredded pineapple (I used fresh, but canned works) and a dash, a tiny dash, of salt. Mix thoroughly, and refill the egg halves. Over the filled egg halves, sprinkle more shredded pineapple, and bake in a 350 oven for about fifteen minutes.

Don’t plan on any leftovers. I was counting on these eggs to be a side dish but they were devoured before I had a chance to get dinner on the table.

They are SO GOOD. Almost like pineapple candy.

But they’re eggs, so they’re good for you. Really.

Strawberry Habanero Poke Cake

Poke cakes are so easy, and so much fun to make, too. You can make a delicious poke cake with any of our Texas Pepper Jelly products, but my kids like Strawberry Habanero Poke Cake best.

Poke cake is so simple – you can use any kind of cake – I use a mix (don’t judge me!) and for strawberry poke cake, white, yellow, or strawberry cake mix are what my kids like best. The last time I made this cake, I used a yellow cake mix.

Follow the directions on the box of cake mix and pour into a rectangular baking dish. Bake according to the guidelines on the box. Remove from oven and let cool only slightly.

Remove the lid from a 12-ounce jar of Texas Pepper Jelly’s Strawberry Habanero pepper jelly and place in microwave for 30 seconds. While the pepper jelly is warming up, take an ice pick or other sharp object and poke holes all over the cake.

Pour the warm pepper jelly over the cake and spread evenly with butter knife or the back of a spoon. Don’t force the pepper jelly into the holes, but be sure each hole is well covered by pepper jelly.

Let the cake cool completely before cutting. The pepper jelly will spread throughout the cake via the holes and will be attractive to see when cut, and delicious to devour!

My husband likes Pineapple Habanero poke cake best, so maybe I’ll make one of those next time.

Getting back to the Strawberry Habanero poke cake – fresh strawberries are not in season here, not yet, but I like to slide some and place them over the pepper jelly before serving. Expensive as out-of-season berries may be, they really make a cake look like something you fussed over all afternoon instead of the super-simple Texas Pepper Jelly poke cake you’re serving!

Baked apples – some people call them a side dish, some people call them dessert, some people call them a snack – but whatever people might call them, everybody calls them delicious!

Texas Pepper Jelly’s Pineapple Habanero Baked Apples are super easy, but remember, we’ve said this a zillion times and will continue to say it: It’s often the easiest recipes that are the most delicious.

All you have to do to make our baked apples is this:

Remove the core from whatever kind of apples you choose to use, and fill the hole with pepper jelly. My family loves it when I use Pineapple Habanero pepper jelly, but any kind of pepper jelly will be absolutely delicious.

Put the filled apples on a cookie pan and bake for fifteen minutes in a 350-degree oven. Remove, and let the apples “set up” for another fifteen minutes.

Be sure to give the pepper jelly in the apple’s core time to cool; the jelly will be boiling even when the apple itself is cool enough to bite into.

Everybody loves a good dessert, and Texas Pepper Jelly’s baked apples are not only lip-smackin’ awesome – they’re mom-pleasin’ nutritious, too!

My kids love Texas Pepper Jelly’s baked apples for breakfast. So will yours. And you.

Pineapple Habanero Upside-Down Cake

So often, as I’ve told you all so many times before, it’s the simplest recipes that are the best! Texas Pepper Jelly’s Pineapple Habanero Upside-Down Cake is one of those.

I made this Pineapple Habanero Upside-Down Cake last night, and warned my family not to touch it until I could get a picture. You can see from the picture I did manage to take fewer than ten minutes after that warning, how much my family listens to me when there’s fresh, warm cake on the counter. I’m just glad they left enough of the cake so you can at least tell what it is.

Ingredients:

Topping:
2/3 cup brown sugar
1/2 stick butter
1 cup Pineapple Habanero Pepper Jelly
1 can pineapple rings, drained (save the pineapple juice!)

Cake:
2 eggs
2/3 cups sugar
1/2 cup pineapple juice
2/3 cup flour
1 teaspoon baking powder
1/4 teaspoon salt

What to do:

Preheat your oven to 350 degrees.

In a medium baking pan, melt the butter and leave it in the pan. Over the butter, sprinkle the

brown sugar; even it out with a spoon to make sure all the pan’s bottom is covered with brown sugar. On top of the brown sugar, place the pineapple rings. On top of the pineapple rings, spread the pepper jelly.

In a medium bowl, place all the remaining ingredients and mix thoroughly. Use an electric mixer if you can. Pour the mixture over the toppings in the baking pan.

Place in your preheated oven and set your timer for 20 minutes. Give your cake the toothpick test and if it needs more time, set your timer for an additional five minutes.

When the toothpick comes out clean, remove the pan from the oven and let it sit for about ten minutes.

Take a butter knife and loosen the cake from the sides of the pan. Turn the pan upside-down over a plate, pizza pan, or another similar-size pan. It’s ready to eat when your family, friends, or yourself are ready to eat it!

P.S. You can make this cane using the same topping ingredients and a yellow cake mix, but my family loves the scratch cake version best. Sometimes, though, we just don’t have the time for a scratch cake.

Sweet & Sour Cocktail Sausages

We went to a Valentine pitch-in last Sunday, and someone brought cocktail sausages. This is one of my husband’s favorite party foods. I like it, too, for that matter.

Yesterday morning, my husband hinted that we don’t have to wait until we go to another party to feast on sweet & sour cocktail sausages. I quite agreed. Last night, I stopped by the grocery store and bought two packages of cocktail sausages. I already had the rest of the ingredients in the pantry.

The recipe is really quite simple; people always ask me for it and they have a hard time believing how easy it is, and how few ingredients it takes. Really, the recipe is mostly spices!

Ingredients:

Two packages cocktail sausages
1/2 cup apricot jam
2 cups Craig’s BBQ Sauce
2 teaspoons nutmeg
2 teaspoons cinnamon
1 teaspoon allspice
1 teaspoon cloves
1/4 finely diced onion

What to do:

Put everything in a large mixing bowl except for the sausages, and mix thoroughly.

Put the cocktail sausages in a large baking dish. Cover with the mixture in the bowl.

Bake at 350 degrees for 45 minutes. Put the baking dish on the table and make sure everybody has several toothpicks. Forks are fine, too, but you don’t have to wash toothpicks. I’m kind of lazy.

Valentine’s Pitch-In: Berry Medley Cheese Ball

I’m going to a Valentine’s Day party on Saturday night; it’s a pitch-in, and I”m bringing Texas Pepper Jelly’s Berry Medley Cheese balls! I’ve made this before to bring to pitch-ins and it’s always really popular.

My husband is, every time, upset that there is never any left over for him to munch on the next day. I don’t anticipate that there will be any this time, either.

Here’s how to make Texas Pepper Jelly’s Berry Medley Cheese Ball.

Ingredients:

5 ounces blue cheese, room temperature

2 ounces shredded Gouda cheese

8 ounces cream cheese, softened

10 ounces sharp processed cheese food

1 Tbs. Feta cheese

1 tsp. garlic salt

1/4 cup finely chopped onion

One 1.5-ounce jar of Berry Medley Pepper Jelly

1/2 cup chopped pecans

Directions:

In a large bowl, combine all of the cheeses, the garlic salt, onion, and the Berry Medley Pepper Jelly.  Mix well.  Cover bowl tightly with Saran Wrap and put it in the refrigerator for a few hours, or overnight.

When mixture is firm, shape it, with your well-washed hands, into a ball.  Roll the log in the chopped nuts.

Put the cheese ball on a pretty tray, and surround it with assorted crackers. 

Put the tray out for your guests and stand back.  You might get trampled in the mad rush that will surely follow!

(Any of the Texas Pepper jelly flavors will work with this recipe; I just like the Berry Medley mixed with the various cheeses, best.)

P.S. I’m going to shape it like a heart for Valentine’s Day.

Football Sunday Food: Texas-Style Cheesy Chicken Dip! (Crockpot Style!)

Your Super Football Sunday couch quarterbacks are going to need food, and plenty of it. Get out your crockpot and make some dips, easy-peasy style. Remember, you can’t have too many dips at your Super Football party, and that’s not even counting your in-laws!

Sunday night football is only a few days away now, so add this awesome recipe to your list of absolutely necessary football night foods! Texas Pepper Jelly’s Texas-Style Cheesy Chicken Dip will become one of the hits of the evening, along with all those painful tackles you’ll all be watching on the big screen. . . .

Ingredients:

One 8-oz package of cream cheese (I use Neufchatel) – softened
1/2 cup of ranch dressing
1/4 cup of Spicy Peach Grilling Sauce
1/4 cup finely diced peaches
1/2 cup crumbled mozzarella cheese
1 cup shredded cheddar cheese
2 cups finely shredded cooked chicken

What to do:

Sunday morning, get out your crockpot, and preheat it on low.

Stir the cream cheese in a medium bowl with the dressing, grilling sauce, and mozzarella cheese. Stir in the shredded chicken and mix well.

Put this mixture in your crockpot, cover with the shredded Cheddar cheese, and turn it on High. Let the mixture cook until bubbly. Once the mixture bubbles and the cheddar cheese browns, turn crockpot to low and let it wait for your guests to arrive – it’s ready to eat any time now. Stir, and serve with chips, veggies, breadsticks, or whatever you wish to DIP!

Football Food: Awesome Sandwiches!

Your hungry football couch quarterbacks are going to want some substantial food, and Texas Pepper Jelly’s thick, spicy meatloaf sandwiches are perfect!

Everybody loves a meat loaf sandwich; we usually use leftover meatloaf, but why wait until the meatloaf is left over to make an awesome sandwich out of it? My husband loves meatloaf sandwiches when he’s watching football, so I always make a big fresh meat loaf for him, our son, and their friends on Superbowl Sunday.

Ingredients:

1 pound ground sirloin
1/2 pound ground sausage
4 eggs
1 large onion, diced
1/2 green pepper, diced
1/2 red pepper, diced
3/4 cup ketchup
1/4 cup Craig’s BBQ Sauce
1 sleeve soda crackers, finely crushed

What To Do:

Put all of the above ingredients in a large bowl and mix thoroughly. Use your hands. Make sure the ingredients are mixed really well.

Put the mixture into a large baking dish and put more Craig’s BBQ Sauce on top. Bake for 45 minutes at 350 degrees. Remove from oven and let “set” for about an hour.

My husband likes his meatloaf sandwiches cold, so I put the baking dish in the refrigerator as soon as it’s cool enough to place on the glass shelf. Usually, I make the meat loaf the night before the big game.

My son likes his meat loaf sandwiches hot, but that’s what the microwave oven is for, right?

When it’s sandwich time, I slice the meat loaf into thick slices, place them on a platter, and put the platter on the coffee table along with all the condiments in the fridge. Lettuce, sliced pickles, and tomatoes go on another platter. Put some plastic knives in a cup, and step back. Put some hamburger buns and some regular bread slices – white and wheat and rye – on another platter. These sandwiches, a bowl of potato salad, a pan of baked beans, and some drinks, will hold your couch quarterbacks for a couple of hours. My crew usually wants some potato chips and popcorn later on.

There’s just something about football that makes even the at-home fans really hungry. Texas Pepper Jelly products will fill those needs better than anything else!
