Super football Sunday is coming! February 7 isn’t all that far away, you know, and the big game deserves some awesome food for your couch quarterbacks! Your football fans will want some quality food while they cheer for their favorite team! Cardinals and Panthers alike will want to be munching away while they encourage their team.

Craig’s BBQ Sauce is the perfect and versatile ingredient for many of a football fan’s favorite munchies. Let’s start with many people’s favorite: Spicy Baked Beans.

You’ve got things to do on SuperBowl Sunday; here’s the easy version!

Ingredients:

1 28-oz can pork & beans
1/2 cup brown sugar
1/2 cup finely diced onions
1/4 cup bacon grease
3 slices bacon, uncooked
1 1/2 cups ketchup
1/4 cup Craig’s BBQ Sauce

What to do:

In a large casserole dish, add all ingredients except the bacon and mix thoroughly. Lay the bacon slices on top of the bean mixture.

Bake in a 350-degree oven for about an hour. If you prefer your baked beans to be a little dry, bake another 15 minutes.

The Craig’s BBQ Sauce will turn an ordinary pan of baked beans into an absolute feast. You’ll probably have to make another batch before the evening’s over.

We’ll be posting a little more than our weekly usual while we’re heading into Super Football Sunday – we want to be sure you and your family/friends have a veritable FEAST of spicy wonderfulness while you’re rooting for your favorite team.

Enchiladas come in all flavors, most of them with at least a little bit of spicy hot goodness, and Texas Pepper Jelly’s Enchilada Rollups are no exception. The degree of hotness is determined by your choice of Texas Pepper Jelly product and flavors.

I like to use my Pioneer Woman casserole dish; I think a pretty dish helps a meal taste better. It’s psychological, I know, but it works for me. What do YOU think?

My family has always loved enchiladas on a winter night, even when the winter night’s temperature is pretty much the same as the previous spring night’s temperature. This weather can’t last much longer, so let’s enjoy it while it’s here.

I still have flowers blooming in the back yard! In December!

Texas Pepper Jelly's Spicy Enchiladas

Texas Pepper Jelly’s Spicy Enchiladas

Here’s how to make Texas Pepper Jelly Enchilada Rollups to serve three:

Ingredients:

Six soft tortillas
2 cups shredded taco cheese
2 cups shredded lettuce
1 cup finely diced onion
1 cup refried beans
2 finely diced tomatoes
Cubed chicken or hamburger, cooked
2 cups any flavor Rib Candy
1 tablespoon chili powder

What To Do:

With a knife, spread refried beans down the center of each tortilla. Add the lettuce, onion, tomatoes, cheese, and meat. Dribble some Rib Candy over the pile, and roll up. Place in a casserole dish and secure with toothpicks.

Pour the rest of the Rib Candy over the rolled tortillas, sprinkle with chili powder, and dump any leftover cheese and tomatoes on top of that.

Bake at 350 degrees for forty minutes, and serve hot. A tossed salad goes nicely with our enchiladas.

Oh, and a cold drink, because, depending on your choice of Rib Candy flavors, these enchiladas can be pretty hot. Delicious and hot.

Texas peppr jelly Christmas logoWe’re all pretty busy these last few days before Christmas, so an easy, nutritious recipe that’s great for a busy December supper is bound to be appreciated!

To make it even easier, buy a bag of pre-mixed salad greens. By the time you’ve purchased all the separate ingredients of your tossed salad, you’ve spent more than you would on a big bag of pre-made salad.

Just my take on an easy before-Christmas supper. I’ve got things to do with my evenings. A simple supper can be a lifesaver!

Merry Christmas from Texas Pepper JellyDecember is a busy month for most of us, for many different reasons and a myriad of holidays; this makes December the perfect month for making the most of your crockpot. There is so much we need to do, and there are so many places we need to go! Whatever helps simplify our lives is well worth doing.

Busy as we are, we still want our families to have nutritious, tasty meals. Fortunately, this isn’t difficult at all!

No, really. It’s easy.

Just get out your trusty slow cooker, slice an onion and line the bottom of the cooker with the slices, fill it with chicken – the chicken can even be frozen! – pour some Craig’s BBQ Sauce over it, replace the lid, set the dial to “low,” and go on with your busy life.

Eight hours later, when you get back home from work, or from shopping, or from visiting, your house will smell wonderful and your main course will be ready to serve. If you haven’t been anywhere at all, and just needed something simple and good for dinner, you’ll have spent the day with the wonderful aroma.

Either way, you and your family will all be more than ready to sit down to a wonderful dinner.

This is such a simple way to prepare chicken; it’s amazing that it’s also so absolutely delicious. But as we say all the time here on the Texas Pepper Jelly blog: it’s often the simplest recipes that are the most delicious!

Happy Thanksgiving from Texas Pepper Jelly It’s Thanksgiving Day, and we here at Texas Pepper Jelly hope that your holiday is a safe and happy one. We hope you all are breaking bread with family or friends, and that when the day is over, you are all enriched by the fellowship.

Let me also add that almost anything on your holiday table can be made even better by putting a little Texas Pepper Jelly on it, or in it, or around it. Dip things into the pepper jelly. Spread pepper jelly on things. Use pepper jelly instead of salad dressing, or regular jelly.

Texas Pepper Jellies are delicious on hot rolls or biscuits. Some pepper jelly in your pasta salad turns ordinary noodles into something festive. Mix a little pepper jelly into your Thanksgiving dressing, before baking, and you’ll have something almost too delicious to be real.

Why settle for plain coffee or tea at your Thanksgiving table? Stir some pepper jelly into your hot drinks and let it melt, and you’ve got a real treat.

Look around at your Thanksgiving table, in fact, and you’ll see many places a dab or two or pepper jelly would make a positive difference.

Make it easy on yourself and your guests; put some Texas Pepper Jelly on the table and let your guests use it however they wish. I can’t think of a single limitation for it!

Texas Thanksgiving: Pepper Jellies on Your Holiday Table

Every year, I set out a basket of assorted Texas Pepper Jellies on my Thanksgiving table. Not only is it really pretty to look at, my family and guests love to be able to pick and choose their favorite flavors, and try new flavors. Pepper jelly can go on anything any other kind of jelly goes on – bread, rolls, meat, and whatever you want to try some one. It’s great for vegetables, too.

Choose your flavors and put them in a pretty bowl to dress up your Thanksgiving table.

Last week you read about using pepper jelly to baste your turkey. Now you’re being reminded that pepper jelly is delicious on almost everything else, as well.

My mother likes to stir a teaspoon of pepper jelly into her hot tea – she said flavored tea is always delicious but using pepper jelly not only flavors her tea, it also gives it a little spicy kick. My mother-in-law does the same thing with hot coffee!

My husband likes to stir a little Texas Pepper Jelly into his, um, other kind of drink. So do I, but please don’t tell my mom.

I always have platters of cream cheese covered with pepper jelly around the house, surrounded by crackers. Al kinds of crackers.

In other words, you can use Texas Pepper Jelly in numerous ways. If you’ve got a new idea, please tell us in the comments!

Two weeks – that’s all the time that’s left to plan for your Thanksgiving dinner! If your Texas Pepper Jelly order has arrived, and if it hasn’t, it will within the next few days, you’ve got the perfect turkey basting liquid.

I have basted my Thanksgiving turkeys with almost every flavor of Texas Pepper Jelly, and two flavors of Rib Candy. My family has loved every one of them. This year, I’m using Texas Pepper Jelly’s Apple Cranberry Rib Candy. We’ve loved it on everything so far, so we plan to find it delicious as our turkey baster this year.

I always bake our turkey in a baking bag, so the moisture stays right there with the turkey. Basting before putting the turkey in the oven ensures that the flavor of the baste melts into the meat and guarantees a super delicious main dish. I’m really looking forward to using Texas Pepper Jelly’s Apple Cranberry Rib Candy. To complement it, I’m stuffing the bird with cranberries and sliced apples, along with an onion. I’m also adding some finely chopped cranberries and apples, and a 1/4 cup of Apple Cranberry Rib Candy, to the dressing.

Spicy Cranberry Salad for Thanksgiving

Thanksgiving is just around the corner, and what is Thanksgiving dinner without cranberries?

A theme of this blog is that often the best recipes are also the simplest, and Texas Pepper Jelly’s recipe for Thanksgiving cranberry salad is super simple, super delicious, and full of spicy cranberry goodness and Texas delights!

Ingredients:

2 cups fresh cranberries
1 cup orange juice, pulpy
1 cup white sugar (I use Truvia)
1 cup chopped pecans
1/4 cup finely chopped celery
1 cup Apple Cranberry Rib Candy
1/2 cup crushed pineapple
1 package raspberry Jell-O mix (powdered)
1 1/2 cup VERY hot water

Apple Cranberry Rib Candy!

What to do:

Grind the cranberries (I use a pastry blender because we like the big lumps and I cannot lie!) Add the orange juice, sugar, pecans, celery, pineapple, and Apple Cranberry Rib Candy and stir well.

Combine the hot water and Jell-O and mix thoroughly. Add to above mixture and mix again. Chill.

Keeps in the refrigerator for about a week, but don’t count on any leftovers. There aren’t usually any.

This spicy cranberry salad isn’t actually a dessert even though your family will think it is. The list of ingredients tells you that it’s made of good nutritious foods, and it’s actually a salad fit to serve with the main dishes.

Some people don’t grind the cranberries at all. I’ve tried this recipe that way and while I liked the whole cranberries, my kids preferred the ground-up version. Your call.

My husband always adds a handful of raisins when he makes this salad. I don’t. Again, your call.
