Life is full of coincidences!

I was chatting with my friend, who happened to mention that she LOVES Texas Pepper Jelly.  I told her that I wrote for Texas Pepper Jelly, and she was amazed at the irony of it!

Tammy discovered Texas Pepper Jelly because of the free sample signup from several months back.  (This particular sample giveaway has expired)  (We’ll be having more of those later, by the way!)  The sample she was sent was Strawberry Habanero.

My newest batch of Texas Pepper Jelly arrived today, and would you LOOK at this GORGEOUS TIN!!!!!

I got to choose the kinds of pepper jelly inside, too.  I think this is one of the greatest things about the Texas Pepper Jelly gift page: we get to CHOOSE what kind of product we want with our gift packs!

Marinated Chicken Breasts

Put thawed chicken breasts in a ziplock bag with a generous helping of your favorite Texas Pepper Jelly. Put in refrigerator and leave for 24 hours. Take skillet and put over med to high heat and sear breasts on both side just long enough to carmelize the Texas Pepper Jelly. Then place in baking dish and cook for about 30 minutes at 350 degrees.

You can also put the marinated chicken breasts in your crockpot before you go to work, set it on low, and when you get home, you’ll have a fantastic dinner.

The wonderful aroma will hypnotize you as soon as you open your door, in fact.  Mmmmm, Texas Pepper Jelly marinated chicken breasts for supper!  Add some potato salad and green beans and you’ve got a feast fit for a king.  Some pecan pie would be good with it, too.  🙂

The holidays are now upon us; December is here!

Craig is spot-on right, too.  I served two appetizers with my Thanksgiving dinner yesterday, and, as I told the big boss himself Craig, my two sisters fought over who got to take the almost-empty jars of pineapple habanero and berry medley home with them.
Guess what they’ll be getting for Christmas!
I’m not worried about my pepper jelly order getting here before Christmas, either.  Everything I’ve ever ordered from Texas Pepper Jelly has come in just a few days.  Plenty of time!

Southwestern Corn Dip

Oh, this one is SOOOO GOOD!  I’m making this for an appetizer on Thanksgiving!

You’ll need the following ingredients to make enough for thirty people:

1lb of cheese – I use Velveeta, but any kind of yellow cheese will do.  If you have a lot of tag ends of cheese in your refrigerator, this is a good way to use them up.

1 can of corn, well-drained

1 onion, finely chopped

1 cup of Habanero Salsa

1/2 cup sour cream

1/2 cup fresh cilantro, finely chopped

Mix the cheese and corn in a large microwaveable bowl.  Microwave on high about five minutes or until cheese is melted.  Stir occasionally.

Mix in all the other ingredients.

Serve hot with any kind of crackers or raw vegetables that you want.  This dip goes with everything.  This recipe makes enough for a small party or family reunion.

For a smaller amount of dip, just halve everything and cut your microwave time to 3 or 5 minutes.  As always, watch any cheese carefully in your microwave.

What’s Cookin’ Wednesday

My kids were jonesing for a “different” kind of snack last night, and I immediately thought of my Texas Pepper Jelly.  My daughter Sara then thought of the big “loaf” of Velveeta cheese that she’d seen in the refridgerator earlier. (We’re seldom without Velveeta in this house.)  (Now that we’ve discovered Texas Pepper Jelly, we’re seldom without that now, either!)

Sara hacked off a few slices of cheese and melted them in a cereal bowl.  She then added the rest of MY jar of Pineapple Habanero Pepper Jelly, stirred it up (It did smell really, really good) and proceeded to crack open the package of snowflake-shaped Ritz crackers I’d been saving for my Thanksgiving pepper jelly appetizers.

Sigh.  It’s just not possible to hide food from my kids.  If it’s being saved for a special occasion, especially, they’ll find it and they will EAT it, too.

I don’t really mind.  Besides, if you had smelled that Pineapple Habanero and Velveeta cheese dip, you’d have been here beating on the door.  It was really far too good to waste on company.  I told my children they could have it all.  And they did.
