Sweet and Sour Meatballs, Texas Pepper Jelly Style

Craig Sharry | November 14, 2008

The department is having a pitch-in tomorrow, and guess what I’m bringing!

Sweet and sour meatballs, made with Texas Pepper Jelly!

I used to make sweet and sour meatballs with BBQ sauce and apricot jam, along with a dash of nutmeg, cinnamon, cloves, allspice, and a tiny little bit of onion powder.  I probably won’t bother with that recipe any more, though.

Tonight, I made sweet and sour meatballs with BBQ sauce and Berry Medley Texas Pepper Jelly, along with a dash of nutmeg, cinnamon, cloves, allspice, and a diced onion.  My house smells so good, I’m sure the neighbors will be pounding on the door demanding a bite of “whatever is in your oven” any second.

It’s actually the second batch of meatballs that’s still in the oven.  The first batch is sitting on the stovetop cooling, and before I take it to the college tomorrow, I’ll have to add some of the second batch to the pan, because we’ve “sampled” so many of the meatballs, well, let me just say the pan is nearly empty there are a few meatballs gone missing. It’s a mystery.

Usually, I make the actual meatballs myself, but I might have cheated and bought a bag of frozen ones earlier.  Maybe.

They’ll never know, will they.  The only other thing I’ll need tomorrow is my gradebook and a box of toothpicks.  That’s the best way to eat sweet and sour meatballs, you know.

I love Texas Pepper Jelly more every day.  Honesty, I really do.

What’s Cookin’ Wednesday

Welcome once again to Texas Pepper Jelly’s What’s Cookin’ Wednesday!

We’re having crock-pot chicken tonight, and I’ve already got the chicken breasts soaking in a combination of Texas Tropical Habanero pepper jelly and a little water.

Before I go to bed, I’ll dump the chicken and the pepper jelly into my crockpot, along with a diced onion and a chopped green pepper.  In the morning, the house will smell lucious!  Before I go to work, I’ll cover the crock-pot insert and put the whole thing in the refrigerator.

When I get home, I’ll put the insert back in the crock-pot and set it on “high.”  By the time my husband gets home, I’ll have the biscuits made and some sweet corn ready.  We’ll lift the chicken pieces out of the crock-pot and put them on a platter, throw the frantic drooling cats out on the deck, and sit down to a simple and delicious meal.  If you put enough chicken in your crock-pot, you’ll have enough left for tomorrow’s supper as well.  If you put enough chicken in your crock-pot.  I always THINK I do, but somehow there’s never any left for the next day.

There used to be, but never since i started using the various Texas Pepper Jellies.

By the way, don’t forget to enter the Texas Pepper Jelly Free Giveaway!

Don’t forget to enter the Texas Pepper Jelly Giveaway!!!

Remember, we give stuff away all the time!  Check this blog daily so you don’t miss out.

Texas Pepper Jelly has more than pepper jelly, you know.  We also offer our customers Messermeister Premier German Cutlery!

Messermeister Cutlery has been around for over a century, but it has been available in the States only since 1984.  Serious cooks appreciate the razor-sharp blades and sturdy handles of Messermeister Cutlery; I have a serrated tomato knife from Messermeister and I absolutely LOVE IT!  I’ve never owned a knife so sharp before!  That’s my knife, pictured above.

You can purchase Messermeister Cutlery from Texas Pepper Jelly individually or in sets.

This weekend, I made homemade breadsticks, and we dipped them in Pineapple Habanero pepper jelly.  I mention this to y’all for several reasons:  it was yummy good, I used my tomato knife to cut the dough into strips, and we had guests who loved the Pineapple Habanero so much, they demanded a sample of my Texas Tropical Habanero, too.  And I was saving that one for Thanksgiving!

Fortunately, Texas Pepper Jelly isn’t expensive, so I can easily order more.  They have really fast delivery, too, so it will be here well before Thanksgiving.

I love to do business with Texas Pepper Jelly.

What’s Cookin’ Wednesday: Slow-Cooked Berry Medley Jalapeno Pork Tenderloin!

Craig Sharry | November 5, 2008

Often, the best-tasting foods are a result of the easiest recipes!  It’s true today, and tonight my family will be sitting down to a fantastic meal, thanks to Texas Pepper Jelly.

The mailman brought a box of incredible delights to my door today, and among the delicious-looking treasures in that box was a jar of Berry Medley pepper jelly.

After I pried it out of my husband’s eager hands, I decided to try a crock-pot meal with it.

So I thawed half of a pork tenderloin and cut it into medallions.  I put them into my crock-pot and dumped about a half-cup of Berry Medley pepper jelly and a sliced onion on it, put the lid on the pot and walked away.  It’s going to slow-cook on low all day, soaking in the Berry Medley pepper jelly and getting so tender, we’ll be able to cut it with the side of a fork.

Add to this some potato salad and baked beans – I used Texas Tropical Habanera in the beans – and we’re going to have to bar the door to keep the neighbors out of our dining room.

Oh, and by the way, that Messermeister knife that came in my Texas Pepper Jelly box today is FANTASTIC!  It’s razor-sharp and sliced through that onion as if it had been butter!

Texas Pepper Jelly products are absolutely wonderful.  I don’t know how I ever managed without them!

Eat Snails on Halloween with Texas Pepper Jelly

Craig Sharry | October 31, 2008

All he needs is a couple of antennae, or eyeballs if you want to take a short cut, and he’ll be complete!  (Stick those on the snails AFTER baking.)

To make your Halloween Snails, just use any yeast bread or roll recipe OR do the quick fix and buy some bread dough in the dairy case.  Roll it out and cover it with any kind of Texas Pepper Jelly you want.  Vary the flavors with the different batches of snails rolls, even.  My daughter likes to sprinkle cinnamon on the pepper jelly before she rolls it up.

Put some food coloring in the bread dough for an even great Halloween experience.  After all, if regular whitish snail-rolls are good, green or red or yellow snail-rolls must be even better, right?

After you spread the rolled-out dough with pepper jelly and whatever else you like, roll it up and cut it into rounds of about half the size you want your snails to be.  (Yeast dough increases in bulk, you know.)

Bake at 375 degrees for about twenty minutes.  It’s always a good idea to check after ten minutes, and gauge your timing thusly.

Tell your kids and their friends that the snails are done, and they should “come and get it!” before they crawl away.

Have some more pepper jelly in bowls for dipping purposes.  Snails should be slimy, you know.

When it’s not Halloween, just tuck the snails’ heads into the roll before you bake them, and you’ll have a normal-looking appetizer, or breakfast, or snack, or whatever.  Pepper Jelly rolls are actually very good for you, and pepper jelly rolls are MUCH better for your kids than sugary rolls.

Eat.  Enjoy.  Pepper Jelly is awesome.

What’s Cookin’ Wednesday: Shrimp!

Craig Sharry | October 29, 2008

When you cook with Texas Pepper Jelly, everything becomes so EASY!

This time of year, people begin to have more parties than ever, and when there is a party, there simply must be food!

One of the easiest appetizer of all is shrimp-n-dip; this is not only simple as can be: it looks fantastic on your table and your guests will absolutely LOVE IT!

Just steam or boil some shrimp (BE SURE YOU DE-VEIN THEM FIRST!  You know what that brown streak IS, right?  Pull that thing OUT!) and arrange the cooked shrimp on a plate with a container for the dip in the middle.  If your shrimps are large enough, hang them around the sides of the dipping bowl.  If the food is going to be sitting out on the table for a long time, arrange the shrimp on crushed ice.

The dip?  That’s the easiest part of all!  Open a jar of Texas Pepper Jelly (any flavor; they ALL work for this!) and pour it into the dipping bowl.  People will pick up a shrimp, dip it into the Texas Pepper Jelly, and then proceed to tell everybody in the room to do likewise because they’ve never tasted anything so good in all their lives.

Repeat this procedure at your next party.  And the next.

Texas Pepper Jelly in a Dominican Republic Recipe!

Craig Sharry | October 24, 2008
No comments

This being United Nations Day (October 24) I thought it would be good to post another recipe, this time from a United Nations country.

Many Americans shy away from ethnic recipes, and I’m not sure why! With the addition or subtraction of a spice here, or an herb there, most cultures’ foods are pretty much the same.

Today, you’re going to learn how to make breakfast, Dominican Republic style! It’s easy as can be, and so yummy good, your family will want you to make this again and again!

You will need the following ingredients, and your finished product will feed four people with moderate appetites:

6 large eggs

¾ (or so) cups of diced ham (or bacon, or ¾ cup of cooked sausage, or sausage links, or pulled pork, or shredded beef)

1 diced tomato (or one small can of diced tomatos)

1 diced green pepper

1 diced onion

1 tsp. vinegar, any kind

2 tsp. vegetable oil

2 tbs. milk (any kind)

½ cup pepper jelly, any kind (experiment and find your favorite for this dish; they’re ALL good!)

Salt to taste, if you feel you must have salt

Heat the oil in a large frying pan. Add everything except the eggs, milk, and the pepper jelly.

Sautee until the green peppers and onions are tender.

Drain thoroughly.

Add pepper jelly and mix thoroughly.

Set aside to “set.”

In the same frying pan (no need to rinse it out) put all six eggs, add a little milk, and scramble.

Put pepper jelly mixture, and the scrambled eggs, in separate bowls, and set them on your breakfast table.

Each plate should contain a serving of scrambled eggs, covered with the pepper jelly mixture.

Add some toast (the pepper jelly is good on toast, too!) and you’ve got a breakfast fit for a king.

Thank you, Dominican Republic, for sharing this fabulous breakfast recipe with us!

Many thanks to all who signed up for the free newsletter and pepper jelly sample.  This giveaway is now closed.  Keep an eye on our blog, though; we give stuff away ALL THE TIME!
