Some Tips for a Safe July 4th Cookout!
Are you getting ready for those July 4th cookouts? There are several things you can do to make the Independence Day cookout run smoothly.
Go ahead and buy the hamburger, make it into patties, and freeze them, with a piece of waxed paper between each patty. Frozen hamburger patties are easier and handier to grill, and the meat isn’t as likely to fall through the grate and be wasted. Frozen hot dogs do better on a grill, too. (Put your pile of separated-by-waxed-paper patties in a freezer bag. Just a little push with a spatula will separate them easily!)

That little piece of waxed paper in between each patty will make a world of difference on cookout day!
We like to mix our fresh hamburger with some Texas Pepper Jelly and VERY finely ground bread crumbs – talk about tasty!
The day before your cookout, even if you’ve already scrubbed down your grill this season, do it again, and be VERY careful to wash and rinse off all traces of metal brush bristles. Not getting all of those off the grate can mean a tragedy, so be really carefully, clean your grill thoroughly, soap with a sponge after you scrape, rinse, soap it again, and rinse again. Run your hands all over it when you think you’re finished; it’s better to run a splinter into your finger than to get one in your throat! After you’re absolutely sure the grill is clean, let it sit out in the sun for several hours – that’s why you should clean it AT LEAST the day before – before you fire it up for the Glorious Fourth.
If you plan on some fireworks in the same area you plan on eating, don’t. Stray sparks and ashes can turn your food into a not-so-tasty treat, and can turn napkins, paper towels, clothing, and hair into bonfires.

No Treat Could Be Simpler, or More Delicious!
We mention this on our blog a lot, but it’s still true, that often the simplest recipes are the best!
Now that the hot summer weather is here to stay, here is a recipe that couldn’t be simpler, nor could it be more delicious!
My kids call this Rapsberry Delight, but your family might have other ideas, all of them referring to something so good, there really isn’t a name descriptive enough to do it justice!
Did I mention that it’s super simple?
Here’s how to do it:
Ingredients:
2 cups fresh raspberries, washed and patted dry
1 2-oz jar of Raspberry Habanero Pepper Jelly
What to do:
Put the berries in a bowl and add the pepper jelly. Mix well.
Now you can spread it on toast, bread, rolls, etc.
Now you can put the mixture in popsicle molds, freeze them, and give your kids (of all ages) a hot-weather treat like no other!
Now you can put it on ice cream.
The options are endless!
My kids like to eat this out of a bowl, with a spoon, after it’s been thoroughly chilled. My husband likes to do the same, only he prefers his at room temperature. I like mine on hot toast, or over ice cream.
You can create this with all of our pepper jelly flavors and their respective fresh fruits. You can mix them up, too. When fresh peach season is here, my husband will not be fit to live with. He’s already talking a about fresh peaches mixed with Peach Habanero pepper jelly.

Texas Sausage Dip
Winter’s over, but don’t put your crockpot away. Hot weather is perfect crockpot weather – slow cookers don’t heat up the whole house, and the absolute handiness of a meal or snack or side ready to put on the table when everybody gets home is just too handy to pass by.
This particular recipe is for our special Texas Sausage Dip, and it’s delicious. Easy to make, too. Here’s how:
Ingredients:
16 oz sour cream
8 oz cream cheese
1 cup cooked finely diced sausage
1 large onion, diced
1/4 cup Texas Pepper Jelly’s Pineapple Habanero pepper jelly
1/4 cup shredded pineapple, drained
1/4 cup hot sauce
1 teaspoon Worcestershire sauce
What to do:
Put everything in your crockpot, replace the lid, set the dial to “low,” and go to work. Eight or so hours later, remove the lid and stir to make sure all ingredients are absolutely thoroughly blended. turn off the crockpot and let it “set” for an hour or two.
After dinner, pour the dip into a big bowl, surround it with breadsticks, raw veggies, and crackers of all kinds, put it on the coffee table, and let your family go to it while they watch TV.
If there’s a football game or any kind of sports event on TV, even better.
I hope you laid in plenty of these ingredients in your pantry and refrigerator, because everybody will want a fresh batch the next night. They can’t have the leftovers because there won’t be any.
A Texas Kind of Sloppy Joe!
The weather outside today was bright and breezy. I didn’t want to fix a heavy complicated meal, so I thought I’d prepare one of my mainstays, which is also one of my children’s favorites, which they have, since childhood, called Sloppy Pepper Joes.
This is actually just regular sloppy joes, but with an assortment of peppers added to the meat. These added peppers make an incredible difference in what was a very ordinary dish. Add the peppers and it’s ordinary no more.
I go one step further, in fact. To the mixture of meat, onions, and peppers, I add some Craig’s BBQ Sauce instead of mere ketchup or tomato sauce.
My kids have told me many times that the first appearance of Sloppy Pepper Joes on the table is one of their signals that it’s really spring. I hadn’t noticed that I never served this in winter, but apparently I don’t.
This is technically a sandwich, of course, but it’s also a meal. A meal on a bun. It’s a meal on a bun that’s easy to make and really nutritious as well.
Ingredients:
2 pounds ground sirloin (any kind of ground beef will do, of course, but I prefer to use ground sirloin.)
2 large onions, diced
1 green pepper, diced
1 red pepper, diced
1 yellow pepper, diced
1 tablespoon chili powder
1 1/2 cup Craig’s BBQ Sauce
Dash salt, if you want
Dash black pepper
What to do:
Brown the ground beef in a large skillet; drain thoroughly. THOROUGHLY. Add all the other ingredients and mix completely. If you need more barbecue sauce, feel free to add more. I usually do.
Cover the skillet and simmer on the lowest heat your stove is capable of. Set your timer for fifteen minutes, but check every five minutes or so.
In the meantime, warm your buns (saying that always cracks me up!) in the microwave.
I always serve this dish with potato salad and baked beans. Flip through the Texas Pepper Jelly blog, and you’ll find awesome recipes for both of these side dishes!
Turn off the stove burner, and spoon the mixture into a serving bowl. Set it on the table with the sides, and call in your family. Stand back.
There will be no leftovers. But on the off chance that there is a little big leftover, add some sour cream and serve later that night with crackers.
